Lemon Cream Pops

With popsicle season arriving quickly, I am having fun digging out some of our favorite frozen treat recipes again.  I credit these creamy pops as the recipe that won my family officially over to the joy of homemade popsicles.  They were sweet, but not too sweet and the silky texture was downright addicting!  Next time I will try them with limes instead!

The ingredients:
1 can (14-ounces) sweetened condensed milk
1 cup whole milk
1/2 cup freshly squeezed lemon juice (it took me 2-1/2 lemons to get the right amount)
1/3 cup sugar
1/2 tsp. finely grated lemon peel

Directions: 
In a bowl, whisk all of the ingredients together until sugar is dissolved. 

Pour into 6-7 ice pop molds or 3-ounce paper cups and insert sticks. 

Freeze for 6-8 hours or until solid. 

Enjoy!

Tropical Mango Smoothie Popsicles

I love making these popsicles using V-8 fusion because not only do my kids get the extra fruit but the juice also has some veggies in it. Without any added sugar, corn syrup, or artificial colors, flavors, or preservatives these are popsicles you don't have to feel guilty feeding to the kids.  Plus they  taste amazing!

The ingredients:


1 mango, chopped
1 banana
1 peach, peeled and chopped
5-6 strawberries, destemmed
1/2 cup  lowfat yogurt
3/4 cup V-8 Fusion Peach Mango
5-6 ice cubes

  Directions: 
Mix all in the blender until smooth then pour into popsicle molds and freeze for 4 or more hours. If you want you could double the yogurt and juice amount and you can drink it as a smoothie while you wait for the rest to freeze.

Enjoy! 
 


*I also found these cute little packets of fruit puree for only a dollar at Harris Teeter. They are purely fruit with nothing added. They had 4 or 5 different fruits to choose from.

Nutella Pudding Pops

A Popsicle is the best kind of summer treat for a kid.  So when I told the kids I was experimenting with popsicles, the kids gave me some ideas.  We love Nutella around here and so we thought we'd make Nutella popsicles.  After a couple different tries we decided that it was best made as a pudding pop.  So put on your apron, and get ready to make your kids smile.

Ingredients:
 3 c cold milk
3/4 c Nutella (chocolate hazelnut spread)
1 small box chocolate pudding

Directions:
Pour the milk into a bowl and then add the Nutella to the milk.
 Blend well so that all the Nutella is all mixed into the milk.
 Now add the pudding mix and blend until it is all mixed well.  No need to continue until it's pudding texture, because you want to be able to pour it into your popsicle molds.

However, if you want to continue mixing until it is much thicker, there is nothing wrong with Nutella pudding.
Pour into popsicle molds, or Dixie cups or even a square pyrex pan if needed.  (you could cut out squares of pudding pops later with toothpicks inserted in the middle)  Place into freezer for at least 4 hours or until frozen.
 Meanwhile, lick the bowl.
When they are frozen, run hot water around the bases of the popsicles for an easy release.  Get out your napkins, because your kids are bound to have some chocolate smiles when you're done.

Now if you would like to eat this for yourself, but not as a popsicle, then I have a grown up version using the same ingredients.

Pour your chocolate mixture into small plastic cups. (like the Dixie cup size).  Place in freezer to freeze completely.

When it is frozen, run hot water around the outside of the cup and invert it onto your serving plate.
Gently squeeze cup to release the frozen chocolate.  Then add fruit of choice to the plate.  Make sure to work quickly because it will melt.


Now everyone in the family can enjoy a frozen chocolaty Nutella treat!  Yea for summertime!

Blueberry and Yogurt Popsicles

My kids seem to think that a summer day without a frozen treat of one kind or another to cool them off, is a sad day indeed.  This summer, though, I made a goal to try to cut down on artificial colors and preservatives in my family's diet and as part of that I decided that we would make all of our own popsicles this summer instead of buying them.  My kids weren't too happy with my edict at first, but they changed their tune when we started experimenting with popsicle recipes and they got to taste the fruits of their labor first hand!  These blueberry and yogurt popsicles were one of the first ones we tried that got Mom approval with their wholesome ingredients and also got full kid approval for taste as well!

With all the experimenting we did this summer, I thought it would be fun to dedicate an entire week here at  Recipe Shoebox to sharing a new Frozen Treat recipe each day.   In past years we've made  Root Beer Floats on a Stick

The ingredients:


1-1/2 cups fresh or frozen blueberries
1 cup water
1/2 cup orange juice
1/4 cup sugar
1 cup nonfat vanilla yogurt (about 8-ounces)

Directions: 
In medium saucepan, simmer blueberries, water, orange juice and sugar for 10 minutes (the mixture does not need to thicken).  Let mixture cool for 20 minutes, then blend in food processor until smooth.  Stir in yogurt then pour mixture into popsicle molds (or 3-ounce Dixie cups) and freeze until solid.  Makes 6-8 popsicles.   For easier removal from the popsicle molds, you may want to run hot water over the outside of the mold for several seconds.
