BASIC PICKLING SOLUTION 2 cups white vinegar (white or red wine vinegar also great) 1 1/2 cup sugar 1 tsp salt 4 medium beets 1 bay leaf 1 tsp coriander seeds 1 tsp black pepper Mix pickling solution. Ingredients: * Shallots 1 * Dry white wine - 200ml  * White wine vinegar - 100ml  * Salted butter cold and diced - 300g * Tarragon (optional) 1. Finely dice one shallots 2. Add three small knobs of butter to a saucepan on medium heat.  3. As soon as the butter melts, add the shallots and cook until soft but barely coloured. Season with salt.  4. Add 200ml white wine and 100ml white wine vinegar 5. Allow the liquid to reduce by half. 6. Add cubes of cold butter gradually whilst whisking (250g in total).
