One with red sauce and one with ricotta. My Dad always preferred ricotta to sauce. I was never a fan of it when I was younger, but certainly am now. Yesterday I bought some terrific local ricotta from Hastings Farm in Suffield, Ct and wanted to showcase it. So I made one of the most basic and yet delicious pastas. 10 minutes start to finish and that includes the boiling of the pasta. Few ingredients + exceptional quality = excellent outcome 👌 . . There is also wonderful textural contrast between the lightly charred exterior and the soft tender interior. The addition of the crispy Parmesan completely elevates the taste as well. Serve simply with a sprinkling of parsley and some lemon wedges . . Roasted Parmesan Cabbage . . One head of green cabbage, with any loose outer layer leaves removed.
