Meatloaf Ingredients: 2 pounds ground beef (90/10) 1.5 cups diced onions 1 large egg 1/4 cup oat flour 1/2 cup tomato sauce 1 T. Italian seasoning 1/8 t. paprika Salt & pepper Sides: 20 oz. baked sweet potatoes 10 oz. steamed broccoli Instructions: 1. Combine all meatloaf ingredients well. Shape into 5 mini loaves. Place in oven safe containers. 2. Bake at 425 degrees for 45 minutes or until internal temp reaches 160. 3. Drain fat if you prefer. Add sweet potatoes and broccoli. 4. Let cool, cover with lids, put in your refrigerator.
