I'm really excited. We're actually going to cook together but I thought maybe I'll make her lunch first. That would be nice. So I'm going to make lobster and potato salad. The first thing I need is potatoes. Got one and a half pounds of Yukon gold potatoes. I cooked them in salted water for about 25 minutes. And this is my secret for perfectly cooked potatoes actually cover the colander with the kitchen towel and just let them steam for about five minutes and then the steam gets in and they get perfectly cooked all the way through so the potatoes have cooled just enough so I can handle them and then I have this incredible dressing it's just delicious actually like to pour it on while the potatoes are still warm because they absorb the dressing best it's a really strongly flavored dressing it's great with lobster and potatoes all I do is pour three tablespoons of champagne vinegar or you can use good white wine vinegar into a measuring cup. I added half a teaspoon of dijon mustard, half a teaspoon of minced garlic, the yolk of an extra large egg, it has to be at room temperature so it creates an emulsion. Two teaspoons of kosher salt and a teaspoon of freshly ground black pepper. Then I whisked it all together and while continuing to whisk, I slowly poured in half a cup of good olive oil, then a couple of more things, quarter of a cup of dry white wine, three tablespoons of drained capers, and just stirred it all together. So I've got about six or eight scallions. I need about one cup of thinly sliced scallions. It's going to give it lots of heat. So the last time I saw Jada actually we went to Montauk and had lobster rolls so I thought lobster salad was appropriate. We do have a really good time together. Right into the bowl with potatoes. That should be about a cup. And then I have half a cup of celery, diced celery, and 1/ 2 a cup of red onion. They're both great with potatoes and I also like the crunch of the fresh vegetables. Okay, now for some lobster. I've got one and1/ 2 pounds of diced cooked lobster meat I mean of course you can cook your own lobsters it would be about 41 1/ 2 pound lobsters but why all that big pots of boiling water screaming lobsters I'm just going to pour this right into the bowl is that look great you know if you wanted to do the salad with some other kind of fish you could actually just do grilled salmon something like that or grilled tuna and just serve a potato salad with it okay just a couple of more ingredients so first is the zest of one lemon. I love the flavor of lemon and potatoes and lobster together. I'm just going to do it right into the bowl and that way you get all the oil from the lemon zest right into the lobster. Okay, that's the zest and that's the juice. So, I always use a little strainer. Make sure you don't get any seeds in the salad. My friend Frank Newbold is coming for lunch with us. Johnny met him the last time she was here so it'll be fun. Okay, next is tarragon. So, I just need about three tablespoons. Just rough chop. Right into the salad. Okay, salt and pepper. Two teaspoons of salt. Remember, potatoes really need a lot of salt. 1 teaspoon of pepper, and a little more vinaigrette just enough so it absorbs in the potatoes and I always save a little extra because as it sits, it's going to absorb more vinaigrette. Okay, I'm just going to get this right into the refrigerator. Let it sit for about an hour for all the flavors to develop and the lobster and the potato to blend with each other.
