Low Carb Sicilian Chicken Soup
This Easy Sicilian Chicken Soup is loaded with tender chicken, bell peppers, onion, carrots and tomatoes. Each generous serving is about 8 net carbs each making it a perfect, low carb comfort food!
Easy low carb dinner | Easy low carb dinner I make a pizza bowl for dinner! | By Justine’s friend Jen | Alright, that was one jar of my Rayo's homemade marinara and on top of our Rayo's, I'm coming in with my creamy melt mozzarella cheese for this delicious little baked lunch. I'm just going in and covering that marinara just like so. I love using this creamy melt. It's one of my sisters and my favorite cheeses to make with this recipe. I'm just going in and making sure we have that sauce covered and I do want to save some of that cheese. So, we're just doing a thin layer to start off into our little loaf tins. Perfect. And on top of our creamy mozzarella. I'm going to come in with one of my favorite ingredients for this recipe is those little cup and crisp pepperonis. Honey also loves the cup and crisp. So I'm just going to go with those right into our creamy melt mozzarella just like so. You can also feel free to do a ham, a turkey pepperoni, kind of any meat selection you like. You can even do like an sausage. But I love the little cup and crisp. It reminds me of I believe it's Papa John's that does the little baby little pepperonis. They're one of my favorite ingredients to use. Just going in carb a couple more. You don't want to skimp on those pepperonis. Right over our cheese. This is going to be a great little lunch or weeknight dinner. And the great thing about these is with these little loaf tins. You could premake them and then heat them up later. That looks good to and we're coming in with some pieces and stems of mushrooms. I just drained the can. So, we're just going over with just some of those mushrooms on top of our pepperonis. Make sure they get nice and spread out. You could also use fresh mushrooms here but I think the canned mushrooms, add a little bit of salt which I love. So, I'm just going in depending on how much you like mushrooms either a little or a lot and I think that looks pretty good. Just making sure that they're evenly distributed before we go in with, of course, our sliced black olives. So I'm just going in. Just kind of sprinkling those olives right on top of our rows, our creamy mozzarella, our cupped pepperonis and our mushrooms. I love a good olive. I definitely do not discriminate either. I love the green, the black, the stuffed, the sliced. That looks pretty good. And next item I'm coming in with. I have a beautifully sliced little yellow bell pepper. So I'm just going to make sure We get those evenly distributed into our loaf tins just like so. And you could also do the orange or the green depending on which kind of peppers you like. You could also do like a jalapeno here. But me and my family really love a good sweet yellow bell pepper. So I decided to go with the yellow. I'm just making sure that they are in every bite before we go in with of course the red bell pepper. I think that the yellow, the orange, and the red are definitely the sweetest of the bell pepper. I feel like the green is a little more earthy. So depending on what you like you can kind of switch up the combination That's a great thing about this recipe is the possibilities are endless. So feel free to kind of do what you like. I think that's pretty good. Just kind of making sure that every bite has a little bit of that delicious red bell pepper. Before we go in with of course my favorite a garlic. I am a garlic girly. Ooh let's make sure that gets open. So we're just going to go in. And I love heavy garlic. So we're just going to go whoo maybe not that heavy. But we'll now take the rest garlic and kind of just go right over the rest of our little muffin tins here. I love garlic but that was a little much. So, I'm just going to go in and make sure it's evenly distributed within our little muffin tins and then, we'll go back to this one and make sure that's evenly distributed with all of our other ingredients before we moved on to our seasonings and to spice things up, we're going to go in with our crushed red pepper. Just on top of all of those delicious ingredients. I love a good crushed red pepper with parmesan on pizza, on pasta, on my breakfast, lunch, and dinner. So, I went in with a generous amount of before we move into our Italian seasoning. Since I found this at the grocery store, I've used it for pretty much all of my kind of pizza, pasta. I even put it on eggs. It's a really good all-around seasoning. So, we're going pretty heavy with that Italian seasoning. Before we go back in with the remainder of our creamy mozzarella. I want to make sure that we get those evenly distributed over our delicious little pizza tins. I mean, If you could smell this right now with that Italian seasoning, it smells so delicious and I'm so excited to share this with my friends and family. Just going in and making sure we get a nice, ooey, gooey, bubbly crust with that creamy melt mozzarella. Just making sure all those are covered. Alright, now that we have those completed, I'm going to pop these into the oven maybe about fifteen, 20 minutes at 350. Oh my goodness. Our low carb pizza bowls just came out of the oven. The cheese is like ooey, gooey, bubbly brown. Our pepperonis are nice crisp up. You can see like our bell peppers, our olives. But we are not done yet. We cannot have pizza without of course just a little bit of grated parmesan cheese. If I can get it there you go. I'm just going to go right on top. Just like so. Just a touch of that Parmesan. Oh my mouth is absolutely watering. They look so delicious. This is going to be a great little like meal prep if you're craving pizza. If you want to do little low carb. I'm also going to toss on some of that chopped parsley just for a little freshness. Little greenery. And you could also make this like as a dip. You could have like some garlic bread to dip it with. Um before you bake them, you could easily just pop them in the fridge or freezer so that way you can just bake 'em when you're ready for 'em but they look absolutely delicious. I'm going to go right on in. I mean, look at how ooey, gooey, and cheesy that is. See if they're hot on the bottom. Oh, they're perfect. Alright. See if I can get like a nice little cheese pull. I mean, all of our ingredients are cooked absolutely perfectly. This is going to be a great little cheat meal. Low carb. Really delicious. Enjoy.
