Preheat the oven to 325°F. Grease and line a 9×13 baking dish. 2. Add the sifted cake flour, baking powder, baking soda, and salt into a medium bowl and whisk to combine. Set aside. 3. In the bowl of your stand mixer fitted with the paddle attachment (or with a hand mixer and large bowl), beat the butter on high speed for two minutes until creamy. Add the sugar and continue to beat on high speed until light and fluffy, about 2 minutes. Scrape down the bowl and paddle as needed. Add the eggs one at a time, mixing for about 10-15 seconds after each addition. Add the vanilla and sour cream and mix for one minute on high speed. 4. Turn the mixer off and add the dry ingredients all at once. Mix on low speed until just combined, then add the milk in a steady stream and mix until just incorporated. 5. Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until the cake springs back to the touch and a toothpick inserted into the middle comes out clean. Use room temperature ingredients - they will better blend together, resulting in evenly distributed ingredients which helps your cake to rise evenly. You will also get a better rise and texture with your cakes. 2. Cream the butter and sugar well - this adds little air pockets to the batter which expand with heat, resulting in a light and fluffy texture. 3. Use good quality cake pans that are light in color - also helps create an evenly baked cake that doesn’t get dark sides. 4. Use fresh ingredients - especially baking powder and baking soda 5. Measure properly- using a scale or if you don’t have a scale, fluff your dry ingredients and lightly spoon into a measuring cup and level with a knife. 6. Get to know your oven - all ovens bake a bit differently and yours might be a little cool or a little hot or maybe it’s just right. Just pay attention and if you notice your baked goods take longer or take less time, make note of it so you can adjust recipe times. Over baking a cake results in a dry crumb. Under baking a cake results in a gummy texture that will sink as it cools. 7. Don’t forget the fat - fat creates and retains moisture. Live in a dry climate? I use this in all of my scratch cake recipes because the difference it makes has been tried and tested so many times. It is just better with it, cakes are more moist, flavorful, and add a “box mix” like texture to scratch cakes! 👉🏼2. Sour cream. Maybe everyone knows this already but maybe not. I always add sour cream in scratch cakes because its acidity breaks down the proteins in flour and helps activate baking soda! This results in fluffier, tender crumb in your cake, PLUS it adds a rich flavor as well! I even add this to box cake mixes! 3. Oil and butter. I’m a big proponent of using both in cake recipes. A lot of people lean to one or the other but I think they both add something that the other can’t! Butter adds flavor and richness, oil adds moisture that can bake out with only butter.
