Greek Style Panzanella...not your typical Greek salad or your Italian panzanella but I thought it was a great combination 👌🏻❤️.
Ingredients:
• 1 pint heirloom cherry tomatoes.
• Red onion slices to taste (I used my mandoline to have them paper thin).
• 1 cucumber (thinly sliced).
• 1 small ciabatta bread loaf (cut by hand, with a bit of olive oil, salt and pepper).
• Feta cheese broken to big chunks by hand.
• 1/4 cup kalamata olives.
• Fresh oregano to taste (about 1 tbsp of leaves).
• Fresh parsley leaves to taste (about 2-3 tbsp).
• 2 tbsp red wine vinegar.
• 1 tsp honey.
• 1/4 cup olive oil.
•Salt and pepper to taste.
