• 3 lb Pork butt or shoulder, boneless

• 6 Garlic cloves

• 2 tsp Mexican oregano, dried

• 1 Onion, small

• 4 Pasilla or new mexico chiles

Condiments

• 1 Chipotle chipotles in adobo sauce

• 2 tbsp Honey

Baking & Spices

• 1/8 tsp Cloves, ground

• 1 Salt and ground black pepper

• 2 tsp Sea salt

Oils & Vinegars

• 2 tbsp Olive oil or vegetable oil

• 2 tbsp White wine vinegar

Nuts & Seeds

• 4 Ancho chiles (stems and seeds removed), dried

• 1 tbsp Cumin, ground

Liquids

• 2 cups Chicken broth or water
