Home made Basil
3 cups of fresh baby spinach
1 cup of fresh basil
1/2 cup walnuts (cashews or mixed)
1 clove garlic
1/4 cup grated Parmesan
1/2 teaspoon of salt
Pepper to taste
1 teaspoon lemon juice
1/2 cup olive oil
Blend all in the food processor until nuts are finely blended. Add olive oil if needed.
I normally serve it mixed with capellini pasta, topped with grilled chicken and fresh cherry tomatoes.
