Ingredients
2 tablespoons olive oil
6 tablespoons butter
1 1/4 cup chopped onion 225 g
1 1/4 cup chopped celery 225 g
1 1/4 cup chopped carrot 225 g
1 1/2 pound ground beef 80/20
3/4 pound ground spicy italian sausage (casing removed)
2 teaspoons salt divided
1/2 teaspoon Black pepper freshly ground
Pinch red pepper flakes
1 cup whole milk
Generous grating of nutmeg
1 cup dry white wine
1 ½ cups canned imported Italian plum tomatoes cut up, with their juice
1/4 cup tomato paste
Parmesan rind
Parmigiano-reggiano cheese and/or ricotta for topping

Ingredients bolognese
Ground beef 500g
Ground Sausage 250g
Tomato sauce 700g
Onion 1
Celery 2
Carrot 2
Cloves 3
Red Wine 3oz
Salt to taste

Ingredients Pappardelle 
00 Flour 300g
Egg yolk 4
Whole Egg 2

Directions 
Sear beef and sausage on a hot pan, then deglaze with red wine and add vegetables. Add tomato sauce and cloves and let it simmer for 2 hours on a low heat with lead half covered.
For the pasta, make sure to let the dough rest over 30 minutes in the fridge. Roll pasta thin (6), then cut pasta to your favorite size, 3cm for pappardelle.
Cook pasta for 2 minutes, then finish to cook in the sauce. Serve with Parmigiano Reggiano cheese and enjoy.

Serves 4-6
Ingredients:

2 celery stalks
1 medium-sized onion
2 tbsp butter
1 tbsp olive oil
1.25 lb ground beef
1 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg

2.5 cups sauce homemade or store bought
3/4 lb tagliatelle

-FINELY mince carrots, celery and onion either by hand or using a food processor. It’s important that the battuto be very finely minced.
