Prepare the shrimp. Devein and shell the shrimp but leave tails on.
Butterfly the shrimp and set it aside.
In a small bowl, combine the egg and water.
Add the butterflied shrimp and marinate for 15 minutes.
In a shallow bowl or pie tin, combine panko with salt and pepper.
Dredge the marinated shrimp into the panko mixture and set it aside.
Preheat the air fryer to 390°F. Place the breaded shrimp into the basket of the air fryer in a single layer, making sure they do not overlap. Cook for 5 minutes.
Open the air fryer and dust the shrimp with a little oil and flip shrimp over. Cook an additional 4 to 5 minutes or until cooked through. (See notes.)
Serve hot. Enjoy!
Notes:
- Try an island twist! For air fryer coconut shrimp, substitute coconut water instead of water and add desiccated, unseasoned coconut flakes into the panko crumbs.
- To keep the air fryer fried shrimp warm, place it in a 225°F oven for up to 15 minutes.
