If you need a quick weeknight side dish recipe that's a total crowd pleaser, try these sheet pan cowboy potatoes. Crispy potatoes are topped with barbecue sauce, cheese, peppers, and sour cream. This potato recipe is great alongside chicken, steak, and pork. Have leftovers? Toss them in a tortilla with scrambled eggs for the ultimate BBQ breakfast taco.

Why Are They Called Cowboy Potatoes?

There are many recipes that fall under cowboy-style cooking. At the the heart of all cowboy recipes is the flavor of campfire cooking and Texas-style barbecue. Here, that means skillet-cooked bacon, barbecue sauce, and jalapenos. We're rounding out the bold flavors with chopped green onions, cheddar cheese, and sour cream.

Tips for Making Cowboy Potatoes

Here are a few things to keep in mind when making this sheet pan potato recipe.

  • Our recipe testers preferred the flavor of tossing the potatoes with reserved bacon grease, but you could easily swap in olive or avocado oil.
  • Cook the bacon until very crisp to ensure it's easy to crumble on top of the finished potatoes.
  • Don't have a fresh jalapeno pepper? Try swapping in thinly sliced bell pepper or pickled jalapeno peppers.
  • We liked the flavor of cheddar cheese in this cowboy potato recipe, but you could also use pepper jack or Monterey jack cheese.
  • Don't have red potatoes? Try using Russet or Yukon gold potatoes instead.

Ingredients

  • 4 slices bacon

  • 2 lb. red potatoes, cut into 1-inch pieces

  • 3/4 cup coarsely chopped red onion

  • 1/2 tsp. salt

  • 1/2 tsp. ground black pepper

  • 1/2 tsp. paprika

  • 1/2 tsp. garlic powder

  • 1/2 cup bottled barbecue sauce

  • 1 cup shredded cheddar cheese

  • 1 jalapeno pepper, sliced

  • 1/4 cup chopped green onions

  • 1/4 cup sour cream

    Cook Bacon

    Preheat oven to 425°F. In a large skillet, cook bacon until crisp, about 8 minutes. Reserve 3 Tbsp. bacon drippings, adding olive oil if needed to make 3 Tbsp. Drain bacon on paper towels. When cool enough to handle, crumble bacon.

    Prep Potatoes

    In a large bowl, toss potatoes and onion with reserved bacon drippings, salt, pepper, paprika, and garlic powder. Toss to combine. Spread on a 15x10x1-inch baking pan.

    Bake 45 minutes or until tender and crispy; stirring after 30 minutes.

    Add Sauce

    Drizzle potatoes with barbecue sauce. Sprinkle with cheese. Bake 5 minutes more or until cheese is melted.

    Sprinkle with bacon, jalapeño, and green onions. Serve with sour cream.
