You'll need to constantly stir the hot sugar to prevent it from burning or browning too much. Heat the pan slowly so the butter doesn't separate. After you stir in the almond flour, let the dough stand until it thickens. Allow plenty of space between cookies when dropping them on the cookie sheet. They will spread a lot during baking. The lace cookies are great on their own, but my grandmother always topped hers with powdered sugar. You can also drizzle with melted chocolate or dulce de leche. Jake Sternquist Make Sugar Mixture In a medium saucepan heat and stir brown sugar, butter, and corn syrup over medium-low heat until butter melts and sugar dissolves, stirring constantly, about 10 minutes. Be careful not to heat too quickly or the butter will separate. If the mixture separates, remove from heat and whisk until the butter combines with the sugar. Remove from heat.
