I vividly remember the first time my grandmother made me lace cookies. As a kid who grew up eating soft sugar cookies from the grocery store, I was blown away by the crisp texture. She taught me her recipe and I still make lace cookies every Christmas. And I still love the delicate texture and toffee-like flavor. There's nothing better with a hot cup of coffee. Here's how to make lace cookies, including creative ways to top each cookie.

Tips for Making Lace Cookies

Keep these helpful tips in mind when making this lace cookie recipe.

  • Don't walk away when you're cooking the sugar mixture. You'll need to constantly stir the hot sugar to prevent it from burning or browning too much. Heat the pan slowly so the butter doesn't separate.
  • After you stir in the almond flour, let the dough stand until it thickens.
  • Allow plenty of space between cookies when dropping them on the cookie sheet. They will spread a lot during baking.
  • The lace cookies are great on their own, but my grandmother always topped hers with powdered sugar. You can also drizzle with melted chocolate or dulce de leche. While the cookies are warm, top with sprinkles or slivered almonds.
  • Let the cookies cool completely before you dig in. This is key to achieving the perfect thin, crisp texture.

Ingredients

  • 1/2 cup packed brown sugar

  • 1/2 cup butter

  • 2 Tbsp. light-color corn syrup

  • 3/4 cup almond flour

  • 1 tsp. vanilla

  • 2 oz. semisweet chocolate, melted, or dulce de leche

    Preheat oven to 350°F. Line cookie sheets with a silicone baking mat or parchment paper.

    Make Sugar Mixture

    In a medium saucepan heat and stir brown sugar, butter, and corn syrup over medium-low heat until butter melts and sugar dissolves, stirring constantly, about 10 minutes. Be careful not to heat too quickly or the butter will separate. If the mixture separates, remove from heat and whisk until the butter combines with the sugar. Remove from heat.

    Add Almond Flour

    Whisk in almond flour and vanilla. Let batter sit for 10 minute to cool. Mixture will thicken upon standing.

    Form Cookies

    Drop batter by rounded measuring teaspoons 3 to 4 inches apart on the prepared cookie sheets, about 6 per cookie sheet. Cookies will spread during baking, leave plenty of space.

    Bake 6 to 8 minutes or until bubbly and golden brown. Let stand 5 minutes on cookie sheets. Transfer cookies to a wire rack to cool completely.

    Add Chocolate

    Spread a thin layer of melted chocolate or dulce de leche on the bottom of a cookie and add another cookie to make a sandwich, if desired.

    Test Kitchen Tip: To melt the chocolate, place chocolate in a small microwave-safe bowl. Cook on 100% (high) power for 1 to 1-1/2 minutes or until soft enough to stir smooth, stirring every 30 seconds.
