We are now taking deposits for pork that will be available in January 2024. Our most recent group of pigs sold out very quickly and our customers have been incredibly happy with the taste and quality of every cut and type of smoked meat they have received. One customer even raved that it was the “best bacon I’ve ever tasted!”

The pigs are raised on our farm, where they graze on pasture and receive supplemental non-GMO grain. Once grown-out, we transport them to our preferred butcher (Home Meats in Shelton, WA), who processes them for us. Your cost will be approximately $6/pound directly to Fern & Briar (our pigs have recently ranged from 150-200 pounds), as well as the butchering costs paid directly to Home Meats. Their costs vary according to your choice of cuts and smoked meats, but also requires a $135 butchering fee. You can reserve your whole or half pig now with a non-refundable deposit of $200.

At Fern & Briar, we raise registered Idaho Pasture Pigs (IPP). This breed is fairly new, with breeding stock first being offered in 2012. IPPs were developed from the breeds of Old Berkshire, Duroc and Kunekune and the result is a pig that is gentle and good-natured, cold-hardy, and has excellent mothering skills. IPPs do not engage in much rooting and have a diet that comes primarily from grazing on grass. Because of this grass-based diet, IPP pork is redder in color, well-marbled, and a sweeter flavor than other breeds.
