No Longer Feelin’ Clammy

There was no Bourbon in today’s afternoon delight – just a little Karen action! She stopped by with her good friend Mary to say hello –

[Thanks to those of you who have asked about Karen. She’s had a really rough couple of days right after her treatments, but then she rallies and feels much better for the 2ish weeks until the next one. She’s doing great today – especially with fun Mary to keep her entertained!]

I’ve been keeping this meal on the back burner for a few weeks now for a night when we don’t have much food in the house.

Pantry staples!

Including a can of clams from Trader Joe’s. These guys were whole, and I decided I prefer the chopped version.

Pantry Staple Clam Pasta

Keep these ingredients on hand for a night when you don't know what to have for dinner. Mix and match based on what you have in stock.
You can use any canned protein source - clams, sardines, tuna, frozen shrimp, beans.
And use any mix-ins you like - capers, olives, sundried tomatoes, herbs.
Top with any cheese you have on hand - feta, goat, Parmesan.
Add any veggies you like!
Prep Time 2 minutes minutes
Cook Time 10 minutes minutes
Total Time 12 minutes minutes
Servings 2

Ingredients

  • 1 can of chopped clams drained [or tuna or sardines]
  • ~1.5 cups tomato sauce Nello’s Sauce rocks!
  • 1.5 cups frozen chopped greens these were Whole Foods mixed greens
  • 2 tbsp sundried tomatoes
  • Pasta for two
  • Parm cheese for garnish

Instructions

  • Cook pasta according to directions in salted water
  • Combine sauce, clams, tomatoes and greens in a medium sauce pan. Heat to a simmer.
  • Serve, garnishing with parm cheese

After dinner Matt and I watched the Bill Maher documentary Religulous. We really liked it – recommended to Netflix!

After the movie my stomach growled! I guess it hasn’t forgiven me for last night.

    I loved Religulous until the end. Then I thought he got a little too preachy. Besides that, though, it made some crazy good points.

    I remember when that movie was released — but it doesn’t look like something that would interest me. To each their own I suppose!

    Wow, we were planning clam pasta for dinner, but we decided on some freezer staples instead. It’s a great pantry-staple meal…tasty, healthy, and satisfying!

    So glad that Karen has 2 good weeks…til the next treatment. I have watched others go thru chemo and it’s a god-awful process. My prayers are with her!

    Nice toast. lol.

    And the clams. I had no idea TJs sold clams. I dont eat them, but would be fun to make for the family!

    Karen looks amazing! Keeping her in prayers. I’ve never tried whole clams — looks intense! 😉 I make clam linguine, but haven’t tried it with a marinara… Should try that soon. Thanks for the inspiration!

    Glad to hear Karen is pulling through. Chemotherapy is not easy, but she has a great support system and I xan tell she’s a fighter. Good for her!

    I prefer chopped clams, too. The whole ones are too chewy.

    Never heard of that movie before but I just checked it out and a review and it looks awful!! It seems like a slap in the face of God. It makes me really sad that people can make fun of Jesus and Christians and call it “entertainment”.

      Saw “Religulous” recently. I’d recommend it, too–and as a (sometimes) Christian I think that Bill Maher–as skeptic as he his–was really very respectful, Tammy.

      you’ve never seen it… who says it is “making fun of Jesus and Christians”? He is promoting “I DON”T KNOW” and trying to get answers to why people feel a certian way. He wants to know the proof and all the “evidence” people always talk about.

        Exactly, Kel. Who says there’s one and only one way to think and to believe. “Jesus” is not the center of every single religion in the world. Ignorance usually is.

          Granted I have not seen the film but the info I got was off of Focus on the Family’s movie review website. Here is just one paragraph from the review:
          Maher calls Jesus “nuts” and dismisses biblical writers as having “f—ed up.” God’s name gets tangled up with “d–n.” Obscene gestures are made. Vulgar jokes target everything from the virgin birth and the Holy Ghost’s indwelling to masturbation, pedophilia and homosexual sex. Nudity includes a shot of a bare-breasted actress playing a nun. http://www.pluggedin.com/videos/2008/q4/religulous.aspx

          As to who says Jesus is the Only Way – Jesus says it in the Bible – John 14:6 “I am the way and the truth and the life. No one comes to the Father except through me.”

            OK, while I certainly don’t think the movie is merely asking thought-provoking questions (it is extremely biased against organized religion, bill maher even admitted to this prior to the movie’s premiere), I also don’t think focus on the family’s webiste is the place to get an unbiased review of the film either. I say, watch and judge for yourself. Personally, I definitely think the movie raised interesting point but knowing what I do about Maher’s personal views on the subject, you can definitely see their prominence in the film which brings down the credibility of the “documentary” in my opinion.

        My husband and I thoroughly enjoyed it. We are going to see him in Jacksonville in May. My only criticism of him is that he can be a tad misogynistic on Real Time, but I thought this movie was brilliant.

    I loved that movie, loved. I suppose we don’t have such a strong religious culture in day to day life in the UK- it was really interesting for me to see.

    I’d never heard of that film! I’ll have to check it out, it looks right up our alley.
    Also I am not a fan of Spring Forward… does anyone know the origin behind Daylight Savings Time? I always heard it had something to do with farmers, but that doesn’t make sense to me…

      The purpose of Daylight Saving Time (not Savings) is that it saves electricity. Daylight Saving Time reduces the time between sunset and bedtime by one hour. This means that less electricity would be used for lighting and appliances late in the day. It was first suggested by Benjamin Franklin in the late 1700s in an effort to save oil because if the sky is still light, then oil lamps would not need to be lighted until later. The modern idea was introduced in 1895 by George Vernon Hudson, an entomologist and astronomer. William Willett independently came up with DST in 1905, and was responsible for its adoption in 1916. Also, During WWI, President Wilson started DST in an effort to save energy for the war effort. As far as the United States and its territories, Arizona (with the exception of the Navajo Nation), Hawaii, American Samoa, Guam, Puerto Rico, and the Virgin Islands do not observe Daylight Saving Time. I believe I recall there was one year maybe in the 1970s where Congress decided to not observe the change. It was hugely unpopular, and was changed to be observed again. For the longest time it was changed back to Standard time the last Sunday in October, and Daylight Saving Time did not begin for the summer until the first Sunday in April. I remember about five years ago, it was changed to the current first Sunday in November and second Sunday in March, respectively. Personally, I love it and am happy with the new schedule since it starts after Halloween now and it is almost a full month of being light out later in the day. I seem to feel a rejuvenation with what seems like a longer day with it being lighter out later (even though we still have the same amount of hours of actual daylight and I am awake before sunrise).

    SO glad to see Miss Karen looking so refreshed! My mom had the same pattern during her chemo, I’m sure Karen will bounce back every time and do GREAT!
    Please tell Karen our thoughts and prayers continue to be with her for a speedy recovery!!!
