But people generally don't name their pets or horses with profanity. Also for the online portion of the game, it prevents any inappropriate or offensive names being used for others to see.

Arthur is a complex character. He's definitely an anti-hero, as most Rockstar protagonists are. There are choices you can make in game that determine just how bad Arthur becomes. Story-wise, Arthur is fiercely loyal to his gang, but he is also a thief and a killer, who is also willing to beat helpless people. (Though he makes it clear he does not enjoy this).
