Travis Tritt who performed the song The Cowboy Way on the soundtrack appears in the rodeo scene toward the beginning of the film.
At one point Pepper (Woody Harrelson) tells Officer Sam "Mad Dog" Shaw (Ernie Hudson) that there are no real cowboys from Texas. However, later when asked about Bill Pickett, Woody didn't know who he was and replied ,"Oh, William!". Willie M. "Bill" Pickett is from Texas and was called the "Greatest Cowboy" of his day.
When Pepper says there are no real cowboys in Texas it's an apparent jab. Woody Harrelson is a native Texan.
One of Woody Harrelson's most noted lines in the film is his preparation instructions for his steak in the fancy restaurant. In real life, Woody Harrelson is a known and avid vegan. This is not his only film with a food moment that he wouldn't actually eat. In Zombieland (2009), he is obsessed with finding and eating a Twinkie. The Twinkie he eventually eats was special made to accommodate his dietary restrictions.
