Although Bludworth does tell Clear and Alex this, I also don't think there really is a way stop death considering death is a natural part of life and eventually every person will be defeated by death in the end, not to mention the idea that death is a force rather than a person (as mentioned in the future for Final Destination 3). As for why Bludworth would even tell them this if it were untrue? Not quite sure but maybe it's a hint towards the idea that he isn't quite as trustworthy as we think. Or it's simply just a retconned idea when they re-did the ending.

The story for Final Destination was first conceived by American screenwriter Jeffrey Reddick as a episode of The X-Files (1993), which was inspired by the real-life TWA Flight 800 crash. Reddick's story was made into a screenplay by Reddick, along with American producers Glen Morgan and James Wong (who also directed the movie). The popularity of the movie has led, so far, to four sequels, Final Destination 2 (2003), Final Destination 3 (2006), The Final Destination (2009), and Final Destination 5 (2011), actually a prequel to the events of this movie, plus several novels and a comic book series.
Bludworth (Tony Todd) is the mortician that Clear Rivers (Ali Larter) and Alex Browning (Devon Sawa) meet when investigating Tod Waggner (Chad Donella)'s body at the mortuary. He represents the charismatic figure of Charon from Greek mythology. His job is to welcome and carry the souls of dead people to their final destination. Without his help, the souls are doomed to wander forever. However, the character's role was left ambigous in the film, and his backstory was never touched upon.
