Obi-Wan's "choose" monologue is a homage to Trainspotting (1996), which starred Obi-Wan actor Ewan McGregor as a drug addict who made a similar monologue about "choosing not to choose."
The blaster burn marks (decals) don't vanish for a long while. This can be seen during the swampy jungle levels and moving further away and turning to look, they are see-able through the white mist after battling many enemies. Most modern games don't have this type of length with decals, as most bullet decals will vanish, even mere seconds after the decal appeared.
As the playable character, when interacting with friendly npcs, like on the naboo levels, the character will say slightly slow "do you understand my language?". The character can also say "hello", which sounds almost robotic or with static in the voice line, and it's clearly not the obi wan's voice actor's voice.
