How to Make Rocky Road Fudge

What I absolutely love about this recipe is just how easy it is to make. There are only 4 ingredients, and you can actually make it in the microwave. Plus – there’s no candy thermometers needed. (Which is always a win in my book).

To make this recipe, you only need 4 ingredients:

  • 2 1/4 cups semi-sweet chocolate chips
  • one 14 oz can sweetened condensed milk (not evaporated milk)
  • 1 cup salted peanuts (unsalted work too)
  • 2 cups mini marshmallows

You’ll put the chocolate chips and condensed milk into a large heatproof bowl and give them a stir. Then microwave on medium power for 45 seconds. Remove from the microwave and give it a stir. Repeat the process until the chocolate is almost melted, then stir until smooth.A plate of rocky road fudge - made with only 4 ingredients.

It’s super important here that your microwave is on medium power and not high power. If it’s on high power the chocolate can end up baking instead of melting – which means the fudge won’t set properly. It’ll be grainy and weird instead of delicious and creamy.

Once it’s smooth and creamy, stir in the peanuts and mini marshmallows. Then pour the mixture into your lined pan, and let it set.

Rocky Road Fudge

Ingredients

  • 2 1/4 cups semi-sweet chocolate chips
  • 1 14oz can sweetened condensed milk
  • 3 cups mini marshmallows
  • 1 cup peanuts

Instructions 

  • Line a 9x13 inch pan with parchment paper, or line with aluminum foil and lightly grease. Let the edges come up over the sides. 
  • Add the chocolate chips and sweetened condensed milk to a large heatproof bowl. Stir so that the chocolate chips are coated in the sweetened condensed milk. 
  • Microwave on medium power for 1 minute, remove from the microwave and stir.
  • Repeat the process until the chocolate is almost melted, then stir until smooth.
  • Stir in the peanuts and marshmallows. Note that if the chocolate is very hot, it can melt the marshmallows. It will still be tasty - but you'll have more swirls of marshmallow.
  • Pour/spoon the mixture into the prepared pan. 
  • Let sit until firm, about 2 hours at room temperature or 60 minutes in the fridge.
  • Lift the parchment paper/foil up out of the pan, then cut into pieces. 

Notes

Store in an airtight container at room temperature for up to 7 days. Fudge can be wrapped tightly and frozen for up to 2 months. Then thaw in the fridge and bring to room temperature before serving.

    Excellent and easy recipe. I used Guittard chocolate, which in my opinion is the best! I would recommend making this decadent Rocky Road fudge for any occasion.

  2. I hate to be that person, but in step 5 you put “stir in chocolate chips and peanuts” I had to go back and reread to see it was meant to be marshmallows 🤪 no harm, no foul..just letting you know 😁
