Cold Tea Cake

COLD TEA CAKE (56)

Baking, Cakes

110g (4oz) dried apricots, chopped


110g (4oz) demerara sugar
2 small eggs, beaten
110g (4oz) sultanas
1 tbs marmalade
225g (8oz) self-raising flour, sifted
1 teacup hot, fresh tea

POUR the tea over the fruit then add the sugar and leave overnight to soak.
Add the marmalade, flour and eggs and mix thoroughly. Pour into a wellgreased loaf tin and bake at gas mark 4/350F/180C) for an hour.
Serve sliced with butter for a treat.
