Along the border of Texas is the city of Chihuahua, which is the indigenous
home of ‘The Desert Spoon’, better known as Sotol.
The earliest uses of Sotol were primarily for eating rather than distilling.
The first known productions of Sotol into a fermented beverage trace back
to the indigenous Raramuri tribe and today’s final product is the result of
European distillation techniques brought to the region by the Spanish.
Once thought to be a spirit for the lower-class, Sotol has become
increasingly sought after internationally for its vegetal and rich flavors
that are enhanced by long droughts in the Chihuahuan desert.

With the spotlight falling squarely on agave, a sugarcane based spirit
called Charanda is an unlikely star rising out of Mexico.
The city of Uruapan is recognized as a prominent agricultural hub
and is well-known for its “red volcanic soil” for which Charanda gets its
namesake. The spirit is a hybrid of sorts, using sugar cane juice distilled
in a copper pot still and molasses distilled in a French-style column still.
The resulting flavor profile is a silky-smooth rum with balanced earth tones
and great floral notes. A testament to how the category of aguardiente
can be influenced by their terroir.

Though all Tequila is Mezcal, not all Mezcal is Tequila. In fact, Mezcal
can be produced from hundreds of species of agave.
Terroir, weather, and man-made processes make Mezcal distinct and
individual. A chameleon, if you will, with the ability to express itself boldly
alone or blend seamlessly into a cocktail with fruits and herbs that
embody the intention of the Mezcalero.

Brazil’s most fashionable distilled beverage, Cachaça, can be easily
described as an aguardiente de caña - the blanket term for spirits
distilled from sugarcane juice. Most just call it ‘Brazilian Rum’.
Similarities exist between Rum and Cachaça but they are inherently
different because of the base used for fermentation.
Though we have been familiarized with Cachaça through cocktail
culture, as it stands, only 1-2% is actually exported out of Brazil which
is a testament to how beloved this spirit is amongst its people.
The most common brands we see are generally colorless but Brazil is
home to the largest rainforest in the world, The Amazon, and produces
thousands of indigenous oak types that make amazing vessels for
aging Cachaça.

The Amazon provides 20% of the oxygen on the planet.
Tapping into the resources and plant life that it has to offer was bound
to produce unique spirits with beautiful characteristics that speak to the
essence of the rainforest and the unique plumage that prospers there.
Peru, in the cocktail world, is most closely associated with Pisco.
However, traditional spirit categories transcend this region and with the
help of the fruitfulness of the region, fun iterations of classic spirits are
finding a new home in this country.

The debate on who created the first version of Pisco will always remain, but
the beauty in each country’s version will never fade. The Limari Valley has been
a quintessential home for growing grapes for Pisco. Vines in the region date
back to the 16th century and the long history of winemaking has afforded
producers the best quality grapes bred in mineral-rich soil.
They say that what doesn’t kill you makes you stronger and the water drip
down effect into the Limari Valley that naturally regulates the water intake of
the vines is evidence of this philosophy.

Singani is Bolivia’s Muscat of Alexandria grape distilled spirit that grows
in the high elevation of the Andes mountains - at 1600m or higher to
be precise. When it comes to grape growing, high elevation will always
translate to floral notes on the nose and palate.
Singani has been produced since the 16th century as the sacramental wine
used in religious ceremonies and today it has risen into the spirits scene as
a unique and playful base for classic Latin cocktails.

Uruguay has the second 2nd highest whisky consumption behind France.
It is also the number one country in consumption of Yerba Mate.
However, the country contains no whisky distilleries and Yerba Mate is not
grown there! Scotch whisky is imported into the country from Scotland and
has very diverse flavor profiles that can manifest easily in cocktails with
richness and vanilla or peat and smoke notes. Yerba Mate is imported
from Argentina. Brewing and enjoying Yerba Mate in Uruguay is a sacred
social ritual. The cebadores are the ones in charge of expertly brewing
and serving the tea.
As with any other beverage, never drink a Mate alone!

Morir Soñando is a staple in the Dominican Republic consisting of
evaporated milk, orange juice, and vanilla which literally means ‘to die
dreaming’. The beverage is traditionally served as a non-alcoholic
breakfast drink. Darnell Holguin submitted his alcoholic version of one
of his fondest childhood memories to the ‘2017 Bacardi Legacy Global
Cocktail Competition’.

In June 2019, Serenata Bar Director, Andra ‘AJ’ Johnson had the
opportunity to compete in the Brugal 1888 ‘Nearly Neat Global
Competition’ in the home of Brugal, the Dominican Republic.
Rum in the Dominican Republic is almost as important as water and is
said to be the essence of the Dominican spirit. Mamajuana is a delicious
drink that generally consists of rum, red wine and honey which is then
soaked in a bottle with special indigenous blend of roots and tree bark.
The native Taino originally made Mamajuana as an herbal tea, but the
addition of alcohol is said to enhance the healing properties.

Cuban rum production has been a core part of Cuba’s national
identity. With strains on foreign relations between the U.S and Cuba,
having limited access to the rum has created a forbidden fruit appeal
to the spirit. In order to make it more accessible, some companies have
added distilleries in other parts of the Caribbean. Cuban rum is primarily
distilled with molasses and goes through column still distillation. Cuba set
itself apart as the premier Aguardiente or ‘firewater’ producer by adding
refining techniques to their rum making process. Instead of a harsh, sharp
product, Facundo Bacardi, and his partners perfected the process of
rum distillation that set a new standard for the taste of ron blancos
throughout Latin America and the Caribbean.

CURAÇAO
Curaçao is a small Dutch colony off of the coast of Venezuela with a
long history of distilling. Most recognizable is the liqueur which it lends
its namesake to. The native Laraha Orange (which is actually green)
is used to produce Curaçao. Though you can produce Curaçao
anywhere in the world, like most things, it is at its most authentic and
delicious at home.
Created in 1896 by Haim Mendes Chumaceiro and Daniella’s great
uncle, Edgar Senior, Curaçao has remained a staple in Caribbean
and Latin cocktail recipes. Blue Curacao is used to impart all of the
essence of the Laraha Orange while giving cocktails that ethereal
hue, transporting imbibers to the cool blue Caribbean Sea.

Fermented in stainless steel vats, is made with an array of grape varieties from very old
vineyards. It defines as a classical Douro, of great seduction, a lot of precision in aromatics, a
unique natural freshness, silky texture, great balance and restrained sumptuousness. It ages
extremely well for at least 15 years. Pairs perfectly with oven roasts and noble meat cuts.

It has been raised in old American oak casks for over a decade, substantially longer than
