The word hygiene means the science of good health, it also signifies cleanliness and freedom from the
risks of infectious diseases (Ng and Low, 1992). Wesbster also defines hygiene as the science that
deals with the preservation of health; a condition or practice conducive to the preservation of health.
Consumers have the right to expect that food they have to eat is safe, of good quality and fit for human
consumption. Most governments are becoming aware of food quality and safety issues and are
realizing the need to come up with legislation to answer concerns and issues on quality and safety of
food distributed to consumers.
International trade and increasing foreign travels are contributing more to the social and economic
benefits to the Philippines. However, it also facilitates the entry and spread of illness. The eating
habits has been change because the new technologies. Food supply has become global with many
different countries supplying food products. More food is prepared and consumed away from home.
Some of them are then brought home for consumption, thus creating new opportunities for
mishandling.
I. ESTABLISHMENTS:
Attention to good hygienic design and construction, appropriate location and the provision of adequate
facilities is necessary to effectively control hazards during processing. The processing facility should
include a product flow-through pattern that is designed to prevent potential sources of contamination,
minimize process delays which could result in further reduction in fish quality and prevent cross-
contamination of finished product from raw materials.
A. Location:
1. Processing Plant:
Potential sources of contamination should be considered in deciding where to locate food
establishments. Processing plants should not be located anywhere, it should normally be located away
from:
environmentally polluted areas and industrial activities which pose a serious threat of contamination;
areas subject to flooding unless sufficient safeguards are provided;
areas prone to infestation of pests; and
areas where wastes, either solid or liquid cannot be removed affectively
2. Equipment
Equipment should be located so that it:
permits adequate maintenance and cleaning;
functions in accordance with its intended use; and
facilitates good hygiene practices, including monitoring.
