SANCOCHO

INGREDENTS:
1 Kg beef rib or roast strip
3 Green Bananas "viches" that is to say very green (it is a colloquial name
with which it refers to the state of the banana)
1 kg cassava chopped and shredded
1 kg potatoes peeled and coarsely chopped (usually in half)
3 ears of baby corn, cut into medium pieces
2 big onions, peeled
4 peeled long onion stems
2 Long onion stalk, chopped
2 bunches cimarrón coriander
2 green tomatoes
2 bouillon cubes
Salt and seasonings to taste
STEPS:
1. Chop the long onions, green tomatoes. The big-headed onions should
be crushed and put all this together, in a pot that is consistent with the
amount of ingredients and the amount of water, to boil, in addition to
putting the whole long onion in the pot at the same time (even with a
bouquet coriander) and beef cola. After putting everything you must
cover the pot and bring it to high heat for about an hour.
2. The cooking temperature is lowered to medium heat, you must cover
the pot again and let it cook for 30 more minutes.
3. After this time you can remove the whole onion and the coriander and
add the banana and the potato, letting it cook for approximately 10
minutes together with the salt, pepper, cumin, and color.
4. Add the Yuca and scratch a couple of potatoes to thicken, cook for 10
more, after which you will lower to a very low heat and leave for 10
more minutes after which the sancocho is ready to serve, adding finely
cilantro to each plate chopped for seasoning and garnish.
5. This Colombian dish is usually accompanied with white rice, salad or
avocado and for those who love spicy some chili that can be prepared
at home. Already, at this point you will be enjoying a traditional
sancocho, one of the tastiest and richest dishes of Colombian cuisine
and which is also very easy to prepare, so you can sometimes surprise
your guests with this delicious recipe of Latin gastronomy.
