Gelato
Ice Cream
Usually made from milk, cream, sugar, egg
and.
flavoring Serve at -20 degree celcius.
Contain 10-20% of fat Incorporate more air
to obtain whipped creamy texture.

Ingredient
1 3/4 cups heavy cream
Instruction.
Pour 1 cup of the cream into a saucepan then add sugar nd
1 1/4 cup whole milk salt. Warm the mixture over medium heat until all sugar
3/4 cup sugar dissolve.
1/3 teaspoon fine sea salt
1 tablespoon vanilla extract Remove from heat and add the remaining cream, milk and
2 cups of cookies (optional add-in) vanilla extract Stir all to combine and chill in the refrigerator.
Sorbet
A dairy-free frozen dessert
Made from water, sugar or sweetener and
flavoring
Contain 0% of fat
Usually incorporate fruit juice or purees

Ingredient Instruction.
Freeze the strawberries until completely solid
3 cups fresh/frozen strawberries
Blend the stawberries until smooth using blender.
2 tablespoons raw honey
Add warm water and mix using spatula.
1/4 cup warm water
Add in raw honey as sweetener.
Freeze for 1-2 hours until firm
Gelato
Made from milk, cream, sugar and flavoring
Use more milk than cream as compared to ice
cream.
Serve at -13 degree celcius
Contain 3-8% of fat
Incorporate less than 20% of air for
smoother texture

Ingredient
1 cups heavy whipping cream
Instruction.
Add milk in saucepan and place over medium-low heat until it comes to a gentle simmer
Whisk the egg yolks and sugar until smooth. Pour the hot milk slowly while whisking. Let the mixture
2 cups whole milk cool down at room temperature.
4 egg yolks Add in salt and vanilla to the custard and mix. Once completely cooled, cover and refrigerate for 4
hours
3/4 cup granulated sugar, 1 tablespoon sugar Whip the cream on high speed once the custard base is cold
3/4 teaspoon salt Gently fold the custard base into whipped cream
Stir in pureed strawberries and sugar then stir with the gelatobase
2 tablespoons vanilla extract Place the mixture in freezer and whip it up after 30-60 minutes for 2-3 times
1 1/4 cups strawberries, pureed Before scooping, allow freezing for 4-5 hours until frozen
