CHICKEN AND BROCCOLI RECIPE

INGREDIENTS

Ingredients:
  1/2 lb. chicken breast, cut into cubes
  1/2 tablespoon cornstarch
  1 pinch salt
  1/2 lb. broccoli florets
  2 tablespoons oil
  3 cloves garlic, minced

Sauce:
  1 tablespoon soy sauce
  1 tablespoon oyster sauce
  1/2 teaspoon sesame oil
  1 teaspoon sugar
  1 teaspoon cornstarch
  1/2 cup water
  3 dashes ground white pepper

DIRECTIONS

Marinate the chicken with the cornstarch and salt. If the chicken is too dry, add a
little water so each piece of the chicken is nicely coated with the cornstarch.

Heat up a pot of water and bring it to boil. Cook the broccoli for 1 minute. Drained
and set aside.

Heat up a wok or skillet on high heat, add the oil. When the oil is heated, add the
garlic and stir-fry until aromatic or become light brown. Add the chicken and do a
few quick stirs. Add the sauce and turn the heat to low. When the chicken is cooked
through, add the broccoli, stir to combine well. Dish out and serve immediately
Superfine tropical fruit shaved ice
 300 gice cubes
 100 gyoghurt
 20 gcondensed milk
 80 gmango, cut into small cubes
 2passion fruits
 A few stalks of mint leaves for garnish
 A few slices of orange for garnish

 Method
 • Put the ice cubes in the blender, then pour into serving bowls.

• Mix the yoghurt with the condensed milk and pour over the ice.

• Spoon mango over the ice and top with passion fruit.

• Garnish with mint leaves and orange slices.


Wholesome Green Apple Juice
Ingredients

 1green apple
 60 gspinach
 2 gchia seeds for garnish

Method
• Peel the lemon and oranges.

• Put the green apple, whole and unpeeled, into the fruit juicer.

• Add the spinach, lemon and oranges to the juicer, and juice.
Chicken Rice
Ingredients

Rice Ingredients
 60 gChicken Fat, rendered from chicken tails
 About 45 g Old Ginger, sliced
 6-8 cloves Garlic, crushed
 2Pandan Leaves
 450 gRice, washed and strained
 750 mlStock, from boiled chicken
 4 tbspLiquid Concentrated Chicken Stock

Chicken Ingredient
 4 LWater
 50 gSpring Onion Stalks
 30 gGinger, sliced
 About 1.8 kg Chicken, whole
 As desired Chili Sauce
 As desired Coriander Leaves

Method
STEP 1

In a non-stick pan, render chicken fat till almost crackling. Remove chicken tails. Sauté ginger and garlic till fragrant. Add
pandan leaves and rice, then pour in the stock and add liquid concentrated chicken stock. Mix well, transfer to rice cooker,
select WHITE RICE and press start.

STEP 2

Bring water, spring onions and ginger to a boil. Add chicken and reduce temperature to a slow simmer. Cover pot and cook
for 25 minutes.
STEP 3

Remove chicken from pot and immediately immerse in ice-cold water until completely chilled.

STEP 4

Debone chicken and arrange chopped chicken meat on a serving plate. Serve with ginger and spring onion confit, rice, chilli
sauce and coriander leaves.
Fresh Fruit Popsicles
Ingredients
Servings:4
 1 kg White Grapes
 20 g Sugar
 1 Peach, cut into 2cm slices
 2 Kiwifruits, peeled and sliced
 200 g Strawberries, sliced
 100 g Blueberries, sliced
 100 g Raspberries, sliced

Method
STEP 1

Wash the grapes and juice them in the juicer. Place the grape juice into a pot and bring it to a boil.

STEP 2

Strain the juice through a very fine sieve or cloth to filter out any solids. Add the sugar to the warm juice and make sure it
completely dissolves.

STEP 3

Combine fruits in a mixing bowl and arrange the mixture into a popsicle mold.

STEP 4

Pour enough juice into each mould to just cover the fruit. Insert the popsicle sticks and put it into the freezer for at least 6
hours.
Healthy Fried Spring Rolls Filled with
Salmon Recipe
Ingredients
Servings:2
Spring rolls (makes 6 spring rolls)
 180 gsalmon, cut into 8 cm strips
 90 gred cabbage, shredded
 30 gleek, cut into 8 cm strips
 120 gcottage cheese
 6spring roll wrappers (20 x 20 cm)
 1 tspolive oil
 Pinch of salt
 Black pepper to taste

Sauce
 100 gtomatoes, boiled and chopped
 20 gsweet chili sauce
 5 mlfish sauce

 Method
 • Season salmon with salt and pepper.

• Place a small mound of the chopped ingredients (salmon, red cabbage, and leek)
with a small dollop of cottage cheese on each spring roll wrapper, then fold up.

• Arrange the spring rolls on steam bake tray and brush them with olive oil.

• After pre-heating the oven, insert steam bake tray onto lower shelf position and
press Start.

• Mix all the sauce ingredients to enjoy the dish
