At first glance, Andaz Delhi seems to conform to the modern hotel
mantra. But just a few steps through its main entrance and one starts
noticing that the Delhi-ness is in the details. Even if the capital’s nuances
are lost on you, it won’t be long before one of the many Andaz hosts will
impart their insider knowledge of the capital and its many flavours that
are etched into the property. ‘Made in India’ is the central philosophy
of Andaz Delhi, running parallel with other brand pillars, such as the
creation of a barrier-free environment and a commitment
to contributing to the local community.
The literal translation of Andaz is ‘personal style’ and the watchword
of each property is to represent and echo the local flavour of the city it
is located in. While Andaz Amsterdam, for example, is themed around
Alice in Wonderland (because Alice lived in Amsterdam), the decor of
Andaz Tokyo revolves around the art of origami. At Andaz Delhi, however,
one enters through Kashmiri Gate, an iconic symbol connecting Old
 and New Delhi. Here, it exists in the form of a seven-layered
papier-mâché installation hanging above the main entrance,
symbolising the seven ancient cities of Delhi. Outside, the hotel
fleet consists of vibrantly coloured Ambassadors and snazzy
Jaguars—both Indian-owned brands.
Even the non-Indians who work here showcase a genuine
love for the city, regaling me with an arcane knowledge of
hidden gems and treasures buried around the city—a city
I was born and brought up in and yet had no clue about. At the
helm, General Manager Heddo Siebs is a master storyteller
who enjoys riding a Royal Enfield and drives around his
favourite neighbourhoods in an Ambassador. It’s very much
a love affair with the city for Heddo and he sees Delhi way
beyond its chaos, heat, and traffic. He recently curated
a fun treasure hunt for a group of travellers (that took them
to places such as Khari Baoli, Gurudwara Bangla Sahib,
Nehru Planetarium, and Meherchand Market) to showcase
a wonderful mix of experiences that makes Delhi special.
Although he was met with resistance from his local team
initially, on account of ‘traffic and heat,’ Siebs found a solution.
He took the Delhi Metro from a station within walking distance
of the hotel and managed to cover the entire excursion in less
than three hours in a largely air-conditioned environment.
Executive Chef Alex Moser also prides himself on sourcing
as much local produce as he can. His excitement is palpable
when he talks about discovering ancient Indian grains grown
in the hills of the North, or a cheesemaker who produces
burrata at a farm just outside Delhi and of procuring olive oil
from Rajasthan, all of which make their way to your table at
AnnaMaya, a European-style food hall. Quality and attention to
detail are evident across the menu: salads made with vegetables

British gastronomy.
Since the hotel sources all its ingredients locally, their
menus reflect the seasons. In autumn, you have game
meat, and in winter, quail and turkey, pumpkin, quince and
blood orange, while the breezy spring and summer months
see a plethora of fresh asparagus, rhubarb and berries,
elderflower and samphire.
What also makes the food distinctive is the fact that
the hotel lays emphasis on getting on-board chefs who
have a relationship with British cuisine and traditions,
but can tweak it to create something relevant to
contemporary tastes.
At Eastway Brasserie, sample a selection of the chef’s
classic favourites. You can’t go wrong when you order
Thyme Well Spent, a seasonal cocktail prepared with
British staple spirit gin, distilled a few miles from the hotel.
Drawing inspiration from the Indian and Bangladeshi
communities and curry houses that dominate the nearby
Brick Lane neighbourhood, 1901 Wine Lounge offers local
sweet and savoury treats like coronation chicken on chapatti
bread. At the George Pub, order another English favourite,
the beer battered fish and chips, and choose from a selection
of locally sourced craft beer.

ANDAZ 5TH AVENUE, NEW YORK

A Bite of the Big Apple
From the art on the walls to the ingredients in the dishes,
the aim at Andaz is to give guests a little bit of New York
in every moment. The hotel focuses on using seasonal
ingredients and the highest quality produce.
Executive Chef Daniel Mowles weaves in the five New
York boroughs into the dishes, by partnering with local
purveyors. The taco shells are sourced from Nixtamal in
Queens; the lox is from Russ and Daughters in Manhattan;
and the bagels are from Zuckers. The hotel also reaches
out to local farms for field greens, wild arugula, heirloom
tomatoes, chicken and pork.
At The Shop, which prides itself on its American farm-
to-table fare, you will be welcomed with warm potato bread
from a local bread maker. Order Chef Mowles' lobster roll,
the crostini with ramps and local ricotta, and white truffle
risotto to ring in the New Year.
Down at the cellar level, The Bar Downstairs is where
you must try the burrata (it incorporates duck yolks, as
well as foie gras from the Hudson Valley). The shared plates
are all based on local produce; the pork belly morsels with
achiote, cumin and citrus, will most likely have come from
the Tamworth-Berkshire hogs from upstate producer
Meili Farm.

ANDAZ MAUI AT WALIEA RESORT

Overlooking Mokapu Beach, this 15-acre resort is not only
gorgeous, but also boasts four award-winning restaurants
offering Hawaiian delicacies. Since the hotel sources most of
its produce and fish from local farmers and foragers, expect
an interplay of absolutely fresh and seasonal ingredients.
In the summer, mango dominates, while spring is great for
Pohole and bamboo shoots. In the winter, bottom fish such
as opakapaka, onaga and uku (all from the snapper family)
are delicacies. Mostly, the produce is picked, received and
served to the guest in a matter of hours.
Maui’s culinary richness comes from an amalgamation
of global influences, and the chefs need to interpret
authenticity, modify techniques and use local ingredients to
create sustainable menus. The menus are rotated based on
the farmers’ forecasting of crops.
To sample the best of the island's cuisine, start at Ka’ana
Kitchen. Try the Thai beef hangar steak, served with green
papaya salad and a Thai-style vinaigrette. Wind down
with an artisanal cocktail at Lehua Lounge, and order the
cauliflower, popcorn and arare (a Japanese cracker) to go
with it. At Bumbye Beach Bar, the Poke bowl (jasmine rice,
wakame salad, fresh sashimi grade ahi, tossed in a sesame
and soy dressing) is a must try.

Playwright and author George Bernard Shaw is known
to have said many funny and insightful things
in his life, but perhaps his most astute statement ever was—“There is
no sincerer love than the love of food.” Indeed, there is
no more delightful way to explore a new city or even country
than through its food. And when it comes to India,
the incredible variety of regional cuisine is enough to please
the most discerning and demanding foodie.

SOUTHERN COMFORT
Tamil Nadu
It is best to begin this journey in the South
with the state of Tamil Nadu, which is miles
from dishes like Chicken Tikka Masala
and Rogan Josh that are synonymous with
Indian cuisine globally.

In this state, rice is the undisputed staple—

indeed the king in most meals—starting with
breakfast. South Indian cuisine, especially Tamil
food, can range from the searing hot to the
soothing mild. The popular ingredients used for
seasoning are tamarind, green and red chilli,
black pepper, cumin, coriander and curry leaves.

Locals believe—and rightly so—that a day

beginning with a meal of spongy idlis (fitting the
popular description of being “as soft as jasmine
from Madurai”) dipped into hot sambhar can
never go wrong. The breakfast table generally
groans under the weight of other rice-based
dishes, such as the crisp dosas, vadas and the
fragrant pongal, all served with a variety of
colourful and flavourful chutneys made with
coconut, coriander, ginger, onion and tomatoes.
