8 cups of water 8 ኩባያ ውሃ
1 ½ cups of teff flour 1 ½ ኩባያ የጤፍ ዱቄት
½ cup mashed sweetpotato የስኳር ድንች ½ ኩባያ ልንቅጥ/የተፈጨ

Directions የአዘገጃጀት ቅድመ ተከተል


Pour water into a mixing bowl. Add teff ዱቄቱን ክዳን ባለው እቃ መጨመርና ውሃውን
and mix into a thick dough and add four እየጨመሩ ወፈር አድርጎ ደጋግሞ ማሸት፣ ውሃ
በደንብ ጨምሮ 2-3 ቀናት እንዲቦካ መተው፣

1 ½ cup mashed OFSP የስንዴ ዱቄት 3 ኩባያ
Yeast ጨው ለጣዕም
Salt እርሾ 1½ የሻይ ማንኪያ
Water ዘይት 3 የሾርባ ማንኪያ
በቂ ውኃ

1 ½ cup mashed OFSP 1 ኪሎ ቆጮ (እንሰት)
የብርትኳናማ ስኳር ድንች ልንቅጥ/ፍቅፋቂ 1½ ኩባያ
Water or vegetable oil
ቅቤ ወይም ዘይት
Cardamom ውሃ
Salt ኮረሪማ የተፈጨ/ዱቄት
ጨው

Place qocho in bowl and add the korerima. ውሃውን፣ ቆጮ፣ ስኳር ድንቹ፣ ዘይቱን ወይም ቂቤውንና

In a big bowl, mix all dry ingridients. Add ተለቅ ባለ ትሪ ወይም በጎድጓዳ ሰሃን ስኳር ድንቹን፣ የስንዴ
water and OFSP mash and knead dough ዱቄቱን፣ ዘይቱን፣ ጨው ቀላቅሎ እየደጋገሙ በወፍራሙ

1 Cup vegetable oil የምግብ ዘይት 1 ኩባያ
11/2 cups red onions (chopped) የተከተፈ ቀይ ሽንኩርት 1 1/2 ኩባያ
1/4 teaspoon garlic ነጭ ሽንኩርት 1 የሻይ ማንኪያ
6 sweet potatoes, peeled and chopped 4 ብርትኳናማ ስኳር ድንች ተልጦ የተከተፈ
4 carrots, chopped 4 ካሮት ተልጦ የተከተፈ
1 small cabbage, chopped 6 መካከለኛ ቃርያ የተከተፈ
6 medium chili peppers, chopped በርበሬ 4 የሻይ ማንኪያ
salt and pepper ውሃ
4 tablespoon spices (berbere) ጨው እንደአስፈላጊንቱ
1 cup water
1 table spoon salt(as needed)

The International Potato Center (CIP) is an international organization committed to “achieving food
security, improved well-being, and gender equity for poor people in root and tuber farming and
food systems of the developing world.” As a member of the Consultative Group for International
Agricultural Research (CGIAR) consortium, CIP is a not-for-profit international agricultural
research-for-development organization with a focus on potato, sweet potato, and Andean roots and
tubers. Building upon more than 40 years of experience working with smallholder farmers in more
than 20 countries globally, CIP has demonstrated success in leading programs that lead to improved
food security and nutritional outcomes for smallholder farmers.
With funding from Irish Aid, CIP partnered with academic, government, and non-for-profit
organizations from southern Ethiopia and the U.S. to implement partners in November 2013 to
implement a 38-month project, entitled "Scaling out sweet potato and potato-led interventions to
improve nutrition and food security in Tigray and the Southern Nations, Nationalities, and Peoples’
Region (SNNPR), Ethiopia." The goal of this project is to contribute to improved nutrition and
food security in vulnerable households in Tigray and the SNNPR through increased production
and consumption of nutrient-rich sweet potato and potato varieties as part of diversified diets. The
program takes an integrated approach to strengthen local food security by providing improved
orange-fleshed sweet potato (OFSP) vines, technical assistance, vitamin-A health education, and
school gardens.
One of CIP’s core program activities has been to implement gender-sensitive nutrition education,
food preparation, and behavior change trainings to promove increased consumption of OFSP and
other nutritious foods in collaboratiotn with partner organizations from the SNNPR. These nutrition
and cooking workshops have been conducted at local health posts, schools, agricultural research
centers. Through the process, many local SNNPR recipes were adapted to feature OFSP in order to
improve the nutritional content.
The “Sweetpotato community Recipe book: A Collection of Recipes from Southern Ethiopia”
assembles the recipes that have been created, along with photos.
