Sweetpotato Stew (Key Wot)

Cook onions and garlic in oil until brown. ቀይ ሽንኩርቱን ከዘይት ጋር ለ 5 ደቂቃ ማቁላላት እና

salt and other spices as needed. Slightly mash ቅመማ ቅመሞችን መጨመር፤ አደጓሬውን በትንሹ መዳጥና
haricot beans and add to the sauce, add water መጨመር፤ ውሃ ጨምሮ እሳቱን ቀንሶ ማብሰልና ማውጣት፡፡
and simmer gently until በእንጀራ፣ በዳቦ እንዲሁም በቆጮ መመገብ ይቻላል፡፡

Mashed Sweetpotatoes
የተፈጨ ስኳር ድንች
Bring a large pot of salted water to a ስኳር ድንቹን በደንብ ማጠብና መቀቀል፤ የተቀቀለውን
boil. Add sweetpotato and cook until ስኳርድንች መላጥና ጎረድ ጎረድ አድርጎ መክተፍ፤ በሾረባ
ማንኪያ ጎድጓዳ ሰህን ውስጥ ወተት እየጨመሩ ማሸት
tender, 20 to 30 minutes. ወይንም ፣ በእጅ ወይም በኤሌክትሪክ ሚከሰር በወተት
With a manual/electric mixer on low, ማሸት፣ የወፍረት መጠኑን እንደ አስፈላጊነቱ መመጠን፣
blend potatoes, slowly adding milk, ቂቤውን መጨመርና ለገበታ ማቅረብ፤ ለገበታ ሲቀርብ
about 1/2 a cup at a time. Use more ትኩስእንደሆነ ቢቀርብ ይመረጣል፡፡

Wash, peel and cut sweet potatoes into ስኳር ድንቹን መላጥ ማጠብ እናም መክተፍ፤
small cubes ስኳር ድንቹን አስኪበስል መቀቀል፤
Add water to a pot along with potatoes and ውሃውን ማጠንፈፍና ስኳር ድንቹን መፍጨት/
cook until soft መለንቀጥና ማስቀመጥ፤
Drain water, mash thoroughly and set aside ውሃ በድስት መጣድና ለብ እስኪል መጠበቅ ቀጥሎም
Add water to pot along with cereal and ዱቄቱን መጨመርና ለ5 ደቂቃ ማብሰል፤
cook for 5 minutes
Add mashed potatoes to the cereal, simmer ስኳር ድንቹንና ወተቱን ጨምሮ ቀስ ብሎ እያማሰሉ 3-5
gently for 3-5 minutes ደቂቃ ማብሰል፣
Serve warm ለብ ሲል ልጆች ሊመገቡት ይችላሉ፤

The International Potato Center (CIP) is an international organization committed to “achieving food
security, improved well-being, and gender equity for poor people in root and tuber farming and
food systems of the developing world.” As a member of the Consultative Group for International
Agricultural Research (CGIAR) consortium, CIP is a not-for-profit international agricultural
research-for-development organization with a focus on potato, sweet potato, and Andean roots and
tubers. Building upon more than 40 years of experience working with smallholder farmers in more
than 20 countries globally, CIP has demonstrated success in leading programs that lead to improved
food security and nutritional outcomes for smallholder farmers.
With funding from Irish Aid, CIP partnered with academic, government, and non-for-profit
organizations from southern Ethiopia and the U.S. to implement partners in November 2013 to
implement a 38-month project, entitled "Scaling out sweet potato and potato-led interventions to
improve nutrition and food security in Tigray and the Southern Nations, Nationalities, and Peoples’
Region (SNNPR), Ethiopia." The goal of this project is to contribute to improved nutrition and
food security in vulnerable households in Tigray and the SNNPR through increased production
and consumption of nutrient-rich sweet potato and potato varieties as part of diversified diets. The
program takes an integrated approach to strengthen local food security by providing improved
orange-fleshed sweet potato (OFSP) vines, technical assistance, vitamin-A health education, and
school gardens.
One of CIP’s core program activities has been to implement gender-sensitive nutrition education,
food preparation, and behavior change trainings to promove increased consumption of OFSP and
other nutritious foods in collaboratiotn with partner organizations from the SNNPR. These nutrition
and cooking workshops have been conducted at local health posts, schools, agricultural research
centers. Through the process, many local SNNPR recipes were adapted to feature OFSP in order to
improve the nutritional content.
The “Sweetpotato community Recipe book: A Collection of Recipes from Southern Ethiopia”
assembles the recipes that have been created, along with photos.
