Seamstress Spring Collection

Steamed silken tofu hot pot in a shitake broth with julienne snow pea & Chinese mushrooms. (c,v,l,V) Pan seared wild harvest scallops stuffed with our XO paste, chili & fresh lime. (l,c) Snake bean & golden sweet potato poached won ton with green pea & coriander puree, tobiko roe and pea foam. (v) Crisp soft shell crab on sugar snaps with a sweet & sour style chili sauce. (l,c) Smoked duck breast and enoki mushroom salad, snow pea tendrils & water chestnuts tossed in soy and sesame dressing. (l,c) Twice cooked five spice quail with a salad of fresh garden herbs, julienne cucumber & pickled pink ginger. (l,c) Steamed fillet of kingfish scented with ginger, spring onion & our XO paste. (l,c) Caramelised eggplant with red miso and silken tofu sauce, crispy spice crusted firm tofu, toasted sesame seeds. (c,v,l,V) Pan seared Market Fish of the Day, tamarind dressed herb salad, coconut milk & tahini tossed soba noodles in a vegetable broth. (l,c) Plum sauce glazed Roast duck with sweet pickled candy lemon zest, jasmine rice, orange jus. (l,c) Twelve hour braised Berkshire pork belly with drunken potatoes, steamed baby bok choy, red wine jus. (l,c) Slow cooked pork neck tossed with glass noodles, bitter melon, soy truffled mushrooms and garlic chili caramel. A selection of all three cheeses at 40 grams each A single serve of one cheese at 100 grams Delice De Bourgogne (Burgundy): cows milk, animal rennet Sticky and very soft.
