Dinakdakan is a traditional Filipino dish that originated in the Ilocos region of the Philippines.

It is a
savory and slightly spicy dish made from grilled or boiled pork parts, usually the face, ears, and tongue,
and dressed with a flavorful mixture of vinegar, calamansi or lemon juice, and spices. Here's a basic
recipe for making Dinakdakan:

Ingredients:

For the Grilled Pork:

 1 pound pork face, ears, and tongue (you can also use pork belly or shoulder as an alternative)

 Salt and pepper, to taste

 Water for boiling

For the Dinakdakan Sauce:

 3-4 cloves garlic, minced

 1 small onion, finely chopped

 1-2 pieces red or green chili peppers (siling labuyo), minced (adjust to your desired level of
spiciness)

 3-4 tablespoons calamansi juice or lemon juice

 2-3 tablespoons vinegar (sukang Ilocos or cane vinegar is preferred)

 2 tablespoons mayonnaise

 2 tablespoons pork brain (optional, for a creamier texture)

 Salt and pepper to taste

For Garnish:

 Green onions, chopped

 Red onions, thinly sliced

 Calamansi or lemon wedges

Instructions:

1. Boil the Pork:

 In a pot, place the pork face, ears, and tongue.

 Add enough water to cover the pork.

 Season with salt and pepper.

 Boil until the pork is tender. This may take about 45 minutes to an hour, depending on
the cuts of meat. You can also grill the pork for added smokiness.
2. Prepare the Sauce:

 In a mixing bowl, combine the minced garlic, chopped onion, minced chili peppers,
calamansi juice, and vinegar.

 If you want a creamier texture, add the pork brain to the mixture.

 Mix well and season with salt and pepper to taste.

 Add mayonnaise to the sauce and mix until well combined. Adjust the mayonnaise and
other seasonings to your preference.

3. Grill the Pork (Optional):

 If you prefer a smokier flavor, grill the boiled pork cuts until they have grill marks and a
slightly charred appearance.

4. Slice and Dice:

 Once the pork is cooked (whether boiled or grilled), let it cool for a few minutes, then
slice it into small, bite-sized pieces.

5. Assemble:

 Toss the sliced pork in the sauce mixture. Make sure the meat is well coated.

6. Garnish:

 Garnish the Dinakdakan with chopped green onions and thinly sliced red onions.

7. Serve:

 Serve your Dinakdakan with calamansi or lemon wedges on the side. It's typically
enjoyed as a pulutan (appetizer) or as a main dish with rice.
