Vinification and origin:
The grapes are harvested by hand and transported in small crates.
The grapes are then pressed and fermented in temperature-controlled stainless steel tanks.
The maturing process is according to the Méthode Traditionnelle, with the second
fermentation in the bottle. The wine is aged for at least 12 months
dregs.
The grapes for this Cremant mainly come from Saumur and a small
part of Anjou and Touraine. The soil consists of sand-lime brick, clay and
slate. This terroir contributes to the freshness of the wine.
Taste descrip*on:
Straw yellow, bright color. Fresh, fruity scent with some yeast notes and hints of stone fruit.
Fruity starter with nice fresh mousse, mouth-filling taste
with lots of ripe, tropical fruit, ripe apple and some pear (peardrops). good length in which
the fruit dominates.
Wine-food pairing:
Delicious and fes*ve as an aperi*f and a good accompaniment to appe*zers and meals
intermediate dishes with shellfish and crustaceans and fish and white meat dishes.

Vinifica*on & Origin:
The Special Cuvée (60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier) is a unique
crea*on and is the flagship of the house. Year a]er year the Special Cuvée constant flavor in
the signature, powerful Bollinger style. More than 65% of the grapes come from our own
vineyards, only Premier and Grand Cru. Due to the long matura*on of at least 36 months in
Bollinger's own cellars (about three miles) and by adding to the blend of 'vin de reserve', the
high and refined quality is created. The Champagne region is a vast area around Reims. It
wine region, in prehistoric *mes an inland sea, is characterized by a special limestone
bobom consis*ng of fossils of marine animals that were then in this inland sea. Due to the
northern loca*on of the area, the Champagnes are always characterized by a certain
freshness.
Taste descrip*on:
Clear, pale yellow in color with golden core. A luscious fragrance, aged, complex, rich in taste
with hints of toast and mushrooms. Bollinger State also known for the very beau*ful, refined
mousse. A characterful champagne with a lot of elegance and reserve.
Wine-food pairing:
Combine this Champagne with all types of fish and in par*cular sushi and sashimi. Also
delicious with shrimps, crayfish or lobster. Prefer meat? Then opt for poultry or white meat.
Also very good to combine with Parmesan cheese and cured ham.

Dourthe N°1, Sauvigon Blanc

Vinifica*on and origin:
The Dourthe No.1 graces the wine list of many French Brasserie. a]er the harvest, only the
best fruit is selected, the juice is fermented at low temperature to keep freshness. The juice
then undergoes an aging 'sur lie' for six months. The result is a dusty, crackling fresh and
sparkling Sauvignon Blanc.
The Dourthe vineyards are located on the best terroirs of Bordeaux and are spread over nine
estates. For this wine are the best
plots selected with the best quality grapes.
Taste descrip*on:
Pale yellow and clear in color. Made from 100% Sauvignon Blanc and it smells
and taste you! Typical and characterful. Dusty citrus fruit, a touch of minerality and a hint of
boxwood in the fragrance. Crispy acids, grapefruit, playful, fresh and sparkling. A fresh wine
with a long finish.
Wine-food parings:
Rich, white Bordeaux that can be served well as an aperitif, especially main courses with
fish, fruits de mer, oysters, vegetarian dishes, asparagus and soft cheeses such as goat
cheese. Excellent house wine.

Markus Molitor Riesling (Haus Klosterberg Riesling Trocken)

Vinifica*on & Origin:
The grapes are harvested in October. Becoming 100% healthy grapes gently bruised and
undergo macéra*on for several hours on the grape skins. The must then undergoes a
spontaneous fermenta*on in large wooden barrels. The wine is le] for a long *me in
stainless steel tanks, resul*ng in a nice fruity wine that is well balanced. Markus Molitor has
chosen the grapes for this wine from different vineyards. The soil contains a lot of slate,
which gives crispy, minerally wines.
Taste descrip*on:
Beau*ful dry Riesling with a lot of expression of terroir and fresh citrus fruit. Nice mineral
a]ertaste. Nice balance in the crispy acidity and the lush fruit. Typical for the wines of
Markus Molitor is the hint of fresh yeast in the nose.
Wine-food pairings:
Delicious with smoked fish, sushi, and Asian dishes. The wine can s*ll be preserved un*l

Marques de Riscal Rueda Verdejo

Vinifica*on & Origin:
Once the fermenta*on has stopped, the wine remains in contact with the yeast in stainless
steel tanks for one to two months. This wine has given the Rueda its own appella*on.,The
grapes are usually harvested at night to minimize the risk of premature oxida*on during the
high day*me temperatures. Popular and accessible wine.
Taste descrip*on:
The Verdejo grape has a lot of character and has adapted very well to the extreme
condi*ons of the region, making it possible to produce fresh or barrel-fermented white
wines. The wine has a bright straw yellow color and shows a high aroma*c intensity on the
nose, with aromas of tropical fruits and hints of fennel and fresh grass. Fresh but so] on the
palate with a slightly biber finish typical of the verdejo grape. The finish is very pleasant and
long.
Wine-food pairings:
The wine goes well with dishes based on tomato. It is also a good combina*on with
an*pas*, pasta and olives.

Auxerois Apostelhoeve

Vinifica*on & Origin:
Originally, the Auxerrois grape is a cross from France between Pinot Blanc and Heunisch
Weiss and was intended for the cooler plains in Alsace, among others. Nowadays, the
Auxerrois is mainly grown in Limburg. Winemaker Mathieu Hulst of Apostelhoeve knows
beber than anyone how to handle this beau*ful white grape. This grape does require a lot of
aben*on, but the bunches that you get are phenomenal. Long bunches of firm grapes
harvested in the early morning to preserve freshness. The many marl and pebble soils give
the Auxerrois a lot of depth and richness. On the Apostelhoeve, one of Limburg's most
beau*ful spots on top of the Louwberg, Limburg's oldest and one of the largest wine estates
in the Netherlands is enthroned. The wine estate of the Apostelhoeve currently consists of
14 hectares, where 5 different grape varie*es are planted: Müller-Thurgau, Auxerrois,
Riesling, Pinot Gris and, since 2020, also Viognier.
Taste descrip*on:
As soon as you open the boble, you will be greeted with a beau*ful dusty scent. Lots of
richness of white fruit, blossom and citrus. But if you smell good, you can also note some
lime and some grapefruit and fresh mint. The taste is fresh and dry with nuances of ripe pear
and lots of green apple! On the back of the tongue it gives even more impressions of, among
other things, green herbs, grapefruit, lime peels and gooseberries.
Wine-food pairings:
The Auxerrois is a very fresh fruity wine. Its scent mainly shows notes of apricot and peach.
This wine is delicious with a piece of white fish, a nice fresh salad and tuna. But also not to
forget the Asparagus because that is also a good combina*on with this Apostelhoeve
Auxerrois.

Steininger, Grüner Veltliner

Modern vinifica*on.
Located in the Kamptal area in Austria. Langenlois, where it is located, is Austria's largest
wine town thanks to its extensive vineyards. Steininger is a real family business. Spiegel is
the name of a vineyard at the village of Langenlois.
Taste descrip*on:
Bright pale yellow color. A delicious fresh wine with an abrac*ve bouquet of flowers and
white pepper. The taste is mouth-filling with pure acidity in the a]ertaste.
Wine-food pairings:
Serve with asparagus, poultry, fish dishes and Asian dishes.

Terre Noble

Vinifica*on & Origin:
The grapes are picked at night to preserve the fresh aromas of the grapes to preserve as
much as possible. Modern vinifica*on. The vineyards are located in the Pays d'Oc
appella*on, southern France. The Chardonnay comes from the heart of Hérault, close to
Béziers, with a par*cularly warm terroir that expresses rich and fruity aromas strengthens.
Taste descrip*on:
Light yellow color with a green *nge. An elegant wine with notes of exo*c fruit and peach.
The wine is nicely balanced.

Serve this wine with rich salads, pasta dishes or mild curries.

Kendall Jackson Chardonnay

Vinifica*on and origin:
Chardonnay is the most widely planted wine grape in California and the world. It is a hardy
vine that reflects "terroir" (the characteris*cs imparted to a wine by the climate and soil in
which it is grown). Chardonnay can be clean with bright acidity or full-bodied with tropical
notes and varying degrees of oak. In California, the laber is the more popular style. Sonoma
Coast Chards have more acidity while Napa Valley Chards lean toward a riper and fuller style,
with tropical fruit notes. Oak aging adds layers of vanilla, spice, buber and toasted hazelnut.
Oakier Chards with a slightly bubery profile have a natural affinity with rich seafood such as
lobster or halibut. Crisper, unoaked Chards are best paired with prawns, crab cakes, salads
with mangos and or even mild curries.

L'ALo, CanMna del Nataio

Vinifica*on & Origin:
Can*ne del Notaio is located at the foot of the inac*ve Vulture volcano. Grandson Gerardo
Giuratraboccheq con*nues the work his grandfather started here and works completely
biodynamically. The soil consists of minerals and old volcanic lava soil. In combina*on with
the large differences in temperature between day and night, we get wines with ripe fruit and
pleasant acids that are nicely balanced.
Taste descrip*on:
De l'Abo is smooth and very tasty, with so] tannins and dark red in colour. It is the first in a
series of four from this house. All four are made from the Aglianico grape, which is so typical
of this region. The names of their wines o]en refer to the name of the winery: Can*ne del
Notaio. For example, l'Abo refers to the deed that is signed at the notary.
Wine-food pairings:
Goes well with red meat, pasta with red sauce and cheese.

Vinifica*on & Origin:
In addi*on to the wood-aged character of the wine, the accessible fruit character will not be
lost, therefore applies with 'rack and return' during the fermenta*on process. With this
technique, the skins are sieved from the wine and then mixed with the juice again, this
prevents a 'hard' extrac*on of sharp tannins and bibers.
The winemaker of Salentein has the luxury of choosing from several vineyards for the Barrel
Selec*on. Thus he has the choice between the 'El Oasis estate' and the 'La Pampa estate'
with the difference that the laber men*oned vineyard is more than 200 meters higher. The
grapes of 'La Pampa' ripen under cooler condi*ons and develop other aromas, this gives the
wine more complexity.
Taste descrip*on:
You can look forward to a beau*ful long a]ertaste with this wine, but wait! First enjoy the
delicious scents and aromas of red fruit, blackberries, plums, chocolate and vanilla. This
malbec from the Salentein Barrel Selec*on series has a nice body and fruity character..

The ideal malbec for grilled meat dishes such as hare pepper. Try this Barrel Selec*on also
delicious a]er a meal, for example with hard cheeses.

Morellino Di Scansano

Vinifica*on & Origin:
In 1978 Morellino di Scansano received DOC status and in 2007 the highest Italian
designa*on of origin DOCG followed. The grapes (90% sangiovese and 10% merlot) are
harvested by hand. The fermenta*on and aging takes place in large stainless steel vats to
preserve the expressive, fruity character.
Taste descrip*on:
The nose is spicy with black cherries, rosemary and thyme. The taste is nice and fresh, juicy,
with a velvety structure, something of laurel and fennel.
Wine-food pairings:
This wine goes well with red meat, game and pasta dishes.

Rioja, Marques de riscal

Vinifica*on & Origin:
The vines grow in the best clay-limestone soil. The wine is aged for 24 months in American
oak barrels and then for at least another year in the boble. The tempranillo grape has good
resistance to oak and boble aging thanks to its good acidity and fine tannins. The graciano
and mazuelo grapes, of which no more than 10% is present in the wine, provide the bite and
the lively color. Due to the aging in American barrels, the wine corresponds to the classic
Rioja style: fresh, fine, elegant and very suitable for many years.
Taste descrip*on:
The wine has an intense black cherry color. The aromas are very expressive with notes of
licorice, cinnamon and black pepper and a subtle hint of the long aging in the barrel. The
wine is fresh and easy to drink. It is a very complex wine.
Wine-food pairings:
This wine goes well with grilled dishes, poultry and roasts and of course with ham and mild
cheeses for a drink.

Moscato D'AsM

Vinifica*on & Origin:
Widely acclaimed for their great wines, Icardi is located in the Piedmont on the border of
Langhe and Monferrato, two very famous wine regions in Italy. The 100-year-old winery is
now run by brother Claudio Icardi and sister Maria Grazia. This dessert wine has a low
alcohol percentage compared to the other dessert wines.
Taste descrip*on:
Fresh, slightly sparkling, clear light yellow sparkling color with golden shimmer. With lots of
ripe fruit such as mango, peach, passion fruit, ripe apple and a lible pear at the end. Nice
fresh length, wonderful playful acidity. (5.5% ABV)
Wine-food pairings:
Perfect with fruit desserts with red fruits such as strawberries, raspberries and currants, but
also with sorbets and fruit tarts.
