Objective: To ensure good hygiene practices of personnel so as to prevent or minimize the


contamination of food, packaging, other inputs, equipment, and the food processing environment.
Hygienic practices apply to personnel directly contacting food and other personnel whose actions
could adversely affect food

Procedure:

1. All employees must ensure good hygiene practices in order to process the safe food
2. Before entering into the plant, they wear protective clothing, do hand wash with liquid soap,
dry the hands with the help of hand driers and applied IPA solution
3. Thus, any likely contamination in the food is avoided
4. Section Incharge must ensure the GHP practices of all employees. So that food contamination
is avoided
5. When employees happen to go for either lunch or dinner or any other personal needs, they
follow the norms before they start doing the work
6. Employees make ensure that they remove their protective cloth and keep them in a designated
place before they go out of the work places for personal needs
7. The section Incharge & hygiene supervisor will Train all employees and other workers of the
requirements relating to the hygiene of personnel;
8. Ensure that no person works or enters any food processing area of the premises unless they
comply with the requirements relating to the hygiene of personnel
9. Hands, protective clothing must be washed or cleaned regularly and whenever they become
contaminated as per the requirement
10. All employees are checked by hygiene supervisor, section Incharge & QC person for the
following:

 A head cap or head covering should cover all hair.


 Personal dressings must be covered by aprons issued by company before entering
into the process area.

 On entry into the production and packing all personal must wash their hands
 (I.e. start of the work, Lunch break, Toilet, etc.).
 Finger nails are kept short and clean. Nail varnish, false nails are not permitted.
 The excessive use of cosmetics, flowers, bhindi are not permitted.
 No jewelry except for a plain wedding band is permitted.
 Wrist watches, finger rings, pins, etc. are not permitted.
 Personal belongings are not permitted in the production and packing area.
 All sores, cuts, grazes, infected areas and other wounds must be covered by a
suitably dressing or hand gloves.
 Smoking, drinking and eating in the production and packing area is not allowed
(i.e. cigarette, beedi, alcohol, Gutkha, chewing gum, etc.)
 A person who has disease i.e. Jaundice, diarrhea, vomiting, fever, discharge from
the eye, ear and nose should be reported to concern supervisor or Incharge.

 Nails are always kept trimmed


 Cleaning condition of their cloth
 Nail polishes are prohibited
 Wearing of shoes
 Chewing items if any are found, such employees are immediately sent out of the
factory

Prohibited Acts:
To help prevent product contamination, the following actions are not allowed in GMP areas:

 Eating and/or drinking, including product taste testing. (Permitted only in authorized areas of
the facility or as authorized by the facility Quality Manager or designated manager at the
facility).
 Chewing gum, candies, throat candies, throat lozenges and tobacco.

 Holding toothpicks, matchsticks or other objects in the mouth.

 Placing pens or cigarettes behind the ears.

 Wearing false eyelashes or fingernails.

 Carrying objects above the belt or waistline (e.g., pens, flashlights, thermometers)

 expectorating (spitting) in production areas.

 Carrying pills or medication in clothing pockets. (Exceptions require medical authorization


and the approval of the facility Quality Manager or designated manager at the facility.)
 Smoking in factory premises.

Jewelry & Cosmetics:


 No jewelry, visible or otherwise, or watches shall be worn. One plain wedding band is
allowed. Any deviation can only be authorized through the quality manager which must be
documented and held with HOD.
 Perfumes and aftershaves shall not be used due to potential taint of product.
 Nail polish shall not be worn.
Badges & ID Cards:

 Personnel ID cards must not be carried into the plant.


 Visitor badges must not be a source of contamination at the plant.

Traffic Patterns:
 Employees must follow the established traffic patterns and controls to prevent microbial cross
contamination within the manufacturing site.

Lockers:
 Personal lockers must be maintained free of trash and soiled clothing.
 Foods (lunch box) and direct product contact tools must not be stored in employee lockers.

Clothing and Personal Protective Equipment (PPE):


 Employees who work in GMP areas will wear only company uniform & shoes.
 Whenever entering a GMP area all non-production employees, contractors and visitors must
wear apron and shoe cover.

 Safety helmets must be maintained in a sanitary condition & must not be used for storing or
carrying objects such as cigarettes, notepads, food, pens, etc.

Hand Washing and Sanitizing:


Hands shall be washed and sanitized as per defined procedure:

 On entry to production areas


 Before starting work
 Before handling product
 After using the toilet
 Before and after cleaning equipment
 When hands are soiled
 After eating / drinking / smoking / touching face, nose or ears
 After handling refuse and rubbish
 After coughing or sneezing
 At an appropriate frequency during the day.
 Hand lotions must not be used if hands are in direct contact with product or product-contact
surfaces.

The steps listed below are required when washing and sanitizing hands.
 Wet hands with water.
 Apply soap, lather the soap by thoroughly rubbing the hands together taking care to apply
both rubbing action and soap to the entire surface area of the hands.
 Rinse hands completely.
 Dry hands.
 Sanitize hands with a sanitizer after the hands have been washed and dried.

Activities like Scratch head or body, Touch face or wipe forehead by the use of hands, Place fingers
on, or in, mouth, nose, or ears must be avoided.

 Hair shall be completely covered by use of company issued mobcap, this must cover the ears.
Pins and grips must not be used.
 Mobcaps are for single use and must be applied before work wear. Work wear shall not be
worn without the mobcap
 Employees must be clean-shaven or cover the exposed hair as completely as possible with a
plant-supplied beard or hair restraint (mask).

Disease Control:

 Anyone who has been exposed, or possibly exposed, to a communicable disease must report it
to their supervisor (or other designated person) prior to reporting to their work area.
 The plant Quality Manager must be involved in all decisions about people who work in GMP
areas.
 The Health Questionnaire shall be completed and signed off for all visitors.
