The Best Bite Cafe


You are the owner of the Best Bite Café, a burger restaurant located in the trendy, inner city suburbs of
Melbourne. You have always had the vision of creating an ethical and sustainable business that provided a
warm and welcoming environment to all.
The Café seats 30 people in the dining room and has a small, fully-equipped commercial kitchen at the
back. Being a small local business it primarily targets locals, however the range of customers varies greatly
across different age groups. The Best Bite tries to cater for all customer desires and needs and sources its
products based on locality and seasonality.
You are always looking for new and innovative ways to improve on the café’s sustainability practices and
have recently signed up to a voluntary program for environmental sustainability and resource efficiency.
The first step of the program requires you to investigate current resource usage and conduct research on
relevant regulatory requirements.
While conducting your research you found the following information:
Best Bite Café is running its business for last 10 years. They are serving at least 100 customers every day.
Morning is the busiest period of day followed by a reduced activity time around noon. At evenings, it gets
busy again. It is situated just beside a large milk processing plant named Farmdale Dairy Products.
Best Bite has employed 5 persons for daily operation – one Chef, one coffee maker, one customer
attendant, one cashier and a cleaner (part time).
Best Bite Café has a 10-year old Coffee Machine. The machine runs 4 hours per day for all 90 days of a
quarter. It needs 1200 watts of electricity to run for 1 hour. Quarterly Electricity bill shows that the cost of
1000watts/hour is $0.28
Best Bite sells 5,500 cups of coffee per quarter. They sell it in paper cups. Each paper cup costs $0.10.
Best Bite follows its own Waste Management Policy. It puts all waste – paper cups, used coffee grounds,
etc – into one bin and empties the bin in nearby public dustbin every morning.
Best Bite sells 40 sandwiches every day on an average. It orders and receives 50 sandwiches on a daily
basis. Thus 10 sandwiches remain unsold with an expiry date within 3 days.
Analysis of work process shows Best Bite purchases milk online with a delivery period of 2 days. Though
they order milk keeping sufficient amount in hand, sometimes the delivery period goes to 3-4 days. The
price of the milk is not below the market rate. The online company does not charge any fee for delivery.
Their van delivers the milk every time from their depot which is 15 km away from Best Bite. The van uses
10 litres of fuel per 100 km and emits 10 gm of CO2 / km.
Best Bite uses ‘virgin’ paper towels (non-recycled). It purchases in bulk quantity at $3/roll. Usually they
need 100 rolls quarterly.
While conducting your research you also identified a number of legislative requirements that were new to
you and thought it necessary to review the café’s current policies and procedures to ensure these
compliance requirements are being met.
You also think it will be beneficial for all staff to participate in this program and have arranged an
information session to discuss the topic further.
Before attending the session, you decided to gather and document information on current resource usage
to demonstrate the influence each member has on sustainable work practices.

QUESTION 1
List one piece of legislation, one regulation and one code of practice that relate to environmental issues in
this workplace. Explain the compliance requirements of each and how they can be used to identify
sustainability improvements?

The National Greenhouse and Energy Reporting Act (2007)


The government of Australia passed a scheme named The National Greenhouse and Energy Reporting
Act (2007) to provide the information and data related to the greenhouse gases emission, energy
consumption and production by the companies engaged under different industrial sectors. The
objectives of the scheme include:

 To inform the public of Australia
 To provide report on the greenhouse gases emission, energy production and consumption by
the companies.
Environment Protection (Fees) Regulations 2012
Under this regulation, the fees that is required to be paid for the EPA-administered approvals and
licenses as per the Environmental Protection Act 1970 are being described. In addition to it, the license
fee, environmental audit fees, approval fees and waste transport fees is also being described under this
regulation.
Onsite wastewater management Code of Practice
This code enables the organizations and individuals to comply with the regulations passed by the EPA
1980 and environmental policies provided by the state for ensuring wastewater management. This code
of practice also assists the businesses with the guidance and standards for assuring management of
onsite wastewater.

QUESTION 2
a) Obtain a copy of the following procedure from your assessor:
 Sustainable Compliance Assessment Procedure.
Review your compliance responsibilities as the business owner. Research and document areas in
which the café’s Sustainable Compliance Assessment Procedure could be improved.
List at least five things to be added into the policy.

After reviewing the compliance assessment procedure of the café, few thing that were needed to be
improved includes:

 Firstly, the café is advised to implement clear procedures and policies for ensuring the
efficiency of resources, how the consumption of energy, materials and water can be reduced
wastage can be minimized.

 Secondly, the café is advised to develop policies and procedures for determining the impact
of the operations being done by them on the environment, stakeholders and community as a
whole.

 It has been analysed that the café identified chemical waste, general waste and hazardous
waste in their policy but has not determined the ways through which it can be reduced and
managed.

 There are not any policies that are related to the management of the energy treatment and
recovery and therefore the café is advised to implement polices for the same.

 The café should also provide the local public and the government with the information on
how they deal with the different wastes such as organic matter, liquid, glass and plastic.

b) Obtain a copy of the following internal policy from your assessor:


 Waste Management Policy
Review the policy and identify five areas where The Best Bite Café can improve their practices.
To complete this task, you must conduct research on current systems for resource efficiency by
reviewing current industry publications, journals, or associations’ code of conduct. You must reference
the sources of information.

It is crucial to ensure that effective waste management is being done by every organization and there
must be a proper team for the same in every organization who will develop audits for the valuation of
the wastes arising from different streams of business and provide ways through which waste can be
managed.

After analysing the policy of the Best Bite Café, the five areas where improvement can be made
include:
 Inspecting the raw material immediately after the purchase and looking at the damaged and
broken raw material to ensure optimum purchase of raw material and reducing wastage.
 Enhancing their storage facilities is also one practise they can ensure to effectively manage
the chemical and reducing the chemical waste that will assist in maintaining clean storage
area.
 They can follow the policy of first in first out so that the old raw material and items do not
remain in the storage areas and waste can be managed effectively.
 Energy saving techniques and methods must be adopted by the café because saving energy
is one of the major aims of the waste management.
 Also, they can improve their waste recycling methods such as by placing different bins used
for the disposal of waste and many other techniques.

QUESTION 3
a) List two approaches you could apply in the workplace to assess compliance work practices.

Inspection: The first technique that I will apply in the workplace to assess the compliance work
practices is the inspection. Under this, inspection technologies and even visually the inspection will
be done and checked that whether the standards and compliances are being followed while
performing the business operations. It will involve inspections on the packing, quantity, quality and
marking of the products.

Feedbacks: Another approach that I will apply is feedback as it is considered to be as one of the
effective methods for evaluating the performance of the business as it is generated directly from the
stakeholders of the business. The business can improve their operations through this process as
they will come to know how their processes and procedures are being viewed by the stakeholders.

b) List four examples of common environmental and resources sustainable issues for cafés and
restaurants. Also provide their benchmarks you like to achieve in your organisation.

 Energy efficiency is the first issue that prevails in the cafes’ because when the air
conditioners are on then the staff has to follow all the necessary standards to reduce the
carbon emissions. To achieve this, the staff must ensure that windows are closed, air
conditioners are maintained well and the staff must be provided with adequate room
training.
 Another issue can be how the waste disposal is managed and for it the café should have
plastic bags to carry all the plastic waste.
 Also, the cafes’ face the issue of managing the leftover food and this can be reduced by
distributing the leftover food to the non-profit organizations and those who are needy.
 Another important issue is that water treatment in Best Bite Café is being done in their pools
and to make it more effective and reduce the impact of the harmful gases they can add
chemicals like chlorine to clean the water.

recycled and that impact the environment positively. Not only that these measures even assist in
improving the profitability of the businesses and building reputation. Some of the ways that were
being provided in the articles includes:
 Reviewing the energy bills regularly to check that if the energy is being consumed efficiently.
 Establishing system for the protection of environment to find ways through which water
usage and energy consumption will be managed.
 Usage of smart meters to determine the data related to energy to develop insights on the
resources that are consuming much power.
 Using the appliances with high star ratings and avoid equipment that require heating and
cooling as they consume high energy.

b) What would be the best way to share this information to your work group? Provide rationale behind
choosing the option you chose. Also explain why and how you have chosen the members of your work
group.

All levels of staff are encouraged to communicate honestly and openly, from the lowest-level
workers to high management. The foundation of collaboration and teamwork among employees is
trust and responsibility. Responsibilities should be assigned objectively and in relation to an
employee's skills.

Describe how you could measure and document current resource usage for the following at The Best Bite
Cafe:
A minimum of one example for each item is required expressed in $ terms.
 Paper

For reducing the wastage of paper, the awareness program for employees will be implemented that
will provide them with guidelines through which they can minimize the wastage of paper during
sending mails, storing and taking prints. A proper system should be implemented in which the
wastage of paper made in the entire day should be documented. Also, recycling bins should be
launched in the guest rooms for reducing paper. The regular use of a roll of paper is counted to
determine how much AU$4 paper is currently being used at the Best Bite café.

 Energy such as electricity usage by Coffee machine

Conduct energy audits to evaluate and access the energy used and developing ways through which
the energy consumption can be reduced. The usage of lighting systems and bulbs that are energy
efficient must be the ways through which energy consumption can be reduced. In Best Bite Café the
energy is calculated by energy rating calculator to determine the difference between the actual and
previous month energy consumption.

 Cup

The plastic carry bags must be placed in the café in which the plastic cups should be disposed of

are used each day to serve coffee to clients.

 Transportation

The vehicle’s milometer is being used to calculate the current consumption gasoline amounting to
AU$200 used in the transportation. For the documentation and creation of invoices related to the
usage of fuel, transportation, cups etc., is determined by the ERP program.

Describe three examples of alternative purchasing approaches you could use and how they can contribute
to sustainable work practices and environmental issues.

Three examples of alternative purchasing approaches which could be used to sustainable work
practices and environmental issues are as follows:
 Leverage purchasing: It has been analysed that if Best Bites Café is buying a generic product
such as, bread or milk from the mass market through many providers, this would help Best bites
Café to succeed and all their powers will be used in right approach.
 Altruistic purchasing: Secondly, if Best Bites Café is mainly concerned with fairness, honesty,
equality and trust with respect to purchase of products from individuals which would be helpful in
showing correlation among increasing demand of products by customers.
 Sourcing policy: Sourcing policy is considered to be as a purchasing method which must be
used for supplying company’s goods and services to consumers, through which competitive
number of buyers can easily be determined.

List four stakeholders you could seek input from when setting efficiency targets. For each example provide
the type of input they may provide, based on their roles (played by your assessor). Provide responses in

 Consumer attendees: Consumer attendees is one of the main stakeholders who is responsible
for determining all the requirements which are required by the customers to make purchase of
need products.

 Cashier: Cashier is another stakeholder which can be considered while setting of efficiency
targets, as main role of cashier is to keep proper track of customers through which proper record
of sales which are being made can easily be maintained, through which necessary requirements
of customers can easily be determined.

 Chef: Chef is another stakeholder, who is mainly responsible for reducing the amount of
products, which would be helpful in maximizing the profitability of an organization.

 Customers: Customers is considered to be as another stakeholder for setting efficiency targets,


as through feedback related to all services as well as products which are being offered can be
gathered through which new sustainability practices can be implemented which would help in
attracting more and more customers.

After conducting research and consulting with relevant people you have developed a plan of action. You
are now ready to implement your changes. Having seen a number of systems fail due to the way they
were introduced and implemented in the past you decided to evaluate this process.
As part of your implementation plan, you have decided to provide an ongoing monitoring program and
evaluation process.

QUESTION 8
Now that you have identified the current resource usage and set efficiency targets, research at least 2
alternative strategies, techniques and tools to improve the resource usage and achieve those targets.

Two alternative strategies which can be used to improve resource usage and achieve those targets are
as follows:

 Firstly, it is required that KPI system must be used to set goals for all the resources which are
used in restaurant industry, as Best Bites Café generally aims to increase the usage of
resources.

 Secondly, reduction in waste must be done by 12% as compared to the previous margin and it is
required that various governance strategies must be practiced in order to control the waste of
water and energy in Best Café workplace, by making use of various recycling strategies through
which use of electricity can be minimized.

90 days have now gone since the energy efficiency strategies were implemented. Our use of
electricity has decreased as a result of the new coffee makers' higher energy efficiency
