OBJECTIVE OF MOCK DRILL: TO OBSERVE THE RESPONSE OF ALL EMPLOYEES IN CASE


OF FIRE AND TO SEE IF THEY ARE FOLLOWING EMERGENCY RESPONSE PROCEDURE &
HOW TO ENSURE FOOD SAFETY.

Sequence of Events

Time Description

Intimation for mock drill is communicated to all employees.


All employees are briefed in emergency response
Procedures.
05:16 PM One of the operators observed the fire and Communicated to
his supervisor regarding the fire.

05:17 PM Fire Alarm was initiated.

05:17 PM Soon after alarm was initiated evacuation started.

05:19 PM First person reached assembly point

05:25 PM Last person to reach assembly point.

05:25 PM Roll call initiated

05:29 PM Roll call ended. Total of 340 employees counted.

05:35 PM Instructions as how to response and evacuate in case of


fire was delivered to all employees.
As this is for awareness no real time scenario created
inside the premises, so there will be no impact on
operations and food safety.
05:35 PM All clear was given.
Observations:

1. No food safety related risk observed during operation.


2. Employees did not panic after hearing the emergency alarm.
3. All employees evacuated in a safe manner.
4. All employees formed a queue lines for easy head count.

Recommendations:

1. Location for safe assembly point should be identified.


2. Emergency evacuation plan shall be updated in accordance with recent
layout changes.
3. Emergency response procedure shall be revised and ERT team shall be
trained accordingly.
4. ERT members shall clearly understand their roles and responsibilities in
case of emergency. The same shall be revised in the plan.

Observer Comments:

1. Alarm was not audible to the employees outside premises.


2. Alarm stopped before all the employees evacuated to the assembly
point.
3. No provision of all clear alarm.
4. Recommended to have emergency alarm and all clear alarm with
different pattern and the same shall be known to all the employees.
