Hot Cross Buns - Sweet buns


Hot Cross Buns are sweet buns, flavored with cinnamon or
other spices and with a good handful of dried or candied
fruits hydrated in alcohol. They are soft, fluffy and delicious
with a little butter or a spoonful of your favorite jam and a
glass of warm milk.

INGREDIENTS
Dough:
500 g flour for bread
4 g dry yeast OR 12 g fresh yeast
140 g of milk
180 g of whipped milk
1 egg
40 g of butter
20 g of honey
75 g white sugar
1 g cinnamon
0.5 g nutmeg
10 g of salt
50 g raisins
50 g candied orange (cubes)
50 g cranberries
1 egg for greasing

Flour paste:
65 g white flour
35 g of milk
35 g powdered sugar
35 g butter (room temperature)

INSTRUCTIONS
Dough:
1. The night before, hydrate the raisins and cranberries in the wine.
2. Before starting the buns, drain the liquid from the raisins and cranberries well. You can leave
them in a sieve for 10-15 minutes.
3. Mix the milk with the yeast until the latter melts.
4. Combine milk with flour, whipped milk, egg, butter and honey in the bowl of the mixer.
5. Knead the dough with the help of the hook for 15-20 minutes, checking that the dough starts
to be elastic.
6. Separately, mix the sugar with cinnamon, nutmeg and salt.
7. Put the sugar gradually, little by little, over the dough, kneading continuously.
8. When you have finished incorporating the sugar, add the candied orange peel, raisins and
cranberries, all at once.
9. Continue kneading the dough for another 1 minute.
10. Transfer the dough to a bowl greased with a little oil, then cover with foil and refrigerate
overnight, at least 8 hours or 2 hours at room temperature.
11. The next day, form 60g balls and place them in the oven tray, leaving enough space between
them to rise.
12. Let the buns rise for another 1 hour to 2 hours or until they double in volume.
13. Brush with egg then set aside until the flour paste is ready.

Flour paste:
1. Mix the butter with the powdered sugar - do not foam.
2. Add flour and milk, obtaining a paste.
3. Put the paste in a bowl.
4. Cut the dough then pour the paste over each bun, forming a cross.

5. Bake the buns at 170C for 25-30 minutes or until they become golden.
