UNIT 1. TYPES OF FOOD

Ex.1. Read the following proverbs. Translate them into Russian/Ukrainian:


After supper – mustard.
The appetite comes with eating.
An apple a day keeps the doctor away.
As you brew, so must you drink.
Better an egg today than a hen tomorrow.
Diet cures better than lancet.
Half a loaf is better than no bread.

Read the text:


Once, few people outside of Japan had heard of sashimi or sushi. However,
Japanese food has joined other ethnic foods, such as Chinese and Mexican, to become a
common meal for many in the United States.
Why are people showing more interest in Japanese food? One reason is that some
people are increasingly concerned about the food they eat. They are avoiding fast food,
such as McDonald’s hamburgers and Kentucky Fried Chicken, and junk food, such as
potato chips and candies. Often these foods are fattening and not good for a person’s
health. Japanese food, however, contains only small amount of oil and fat. Fresh food,
not canned food or frozen food, is used. The result is that Japanese food is often rich in
vitamins and minerals and low in calories, so it is regarded as health food. Thus,
Japanese food and ingredients are being chosen more often by those people who are
watching what they eat.

Work in groups of three. Name a food and make sentences about it using the new
expressions. Use theses foods:

Student C: Do you like pizza with green pepper?

Read and translate, and answer the questions:

1. My favourite fruit is lemon. It has a very sweet smell. It is oval-shaped, with a


heavy yellow peel, but don’t let the smell fool you! If you taste it, you’ll find that
it is really sour!

2. I really like to eat hot chili peppers! I think I enjoy going to Mexico, where they
eat a lot of spicy foods because I just love chilies and other spicy ingredients –
the hotter, the better! Of course, when the food is very spicy, I get hot. Then I
have to drink water. But I like the spicy taste so much that I don’t mind. Anyway,
it is very good, especially in winter.

3. You know, I don’t buy too much bread at one time because if it gets old, it tastes
really stale. I like the taste of fresh bread, new bread, but I really don’t like eating
stale, dry bread that has been sitting for a few weeks.

4. Many people like to save bags that have been used only once to make another
cup of tea from them. This saves money. After the bag has been used for two or
three cups of tea, however, the colour of the tea changes from very dark brown to
light brown. This is the sign that the tea is weak. Weak tea tastes more like brown
hot water than tea. Since I like the taste of good tea, I don’t use my bag many
times because I don’t want the tea I drink to be too weak.

5. Do you know why people like to put soy sauce on their food? It’s because soy
sauce has salt in it, so that it will give the food more taste. Soy sauce is very
salty. Maybe, without added salt, the taste of soy sauce would very weak. We
often add salt to the food we eat, but always be careful not to use too much! Very
salty food can make you thirsty!

6. I can tell immediately when I’m in a restaurant that uses a lot of onions because
the smell and the taste are so strong! In fact, whenever I cut onions to put in
food, my eyes water from the strong odour, and the smell is so strong that my
hands and fingers usually have a strong onion smell for a few hours afterward.

7. I like sweet foods! I could eat cakes, cookies, pastries or anything with a lot of
sugar in it five times a day. Cake has such a good sweet taste if it has enough
sugar. If a cake doesn’t have enough sugar, it tastes bland. I think, I like sweet
foods because they give me immediate energy!

Ex. 7. How to make a certain food. Here are some expressions you can use:

Here’s a recipe for frying eggs.


First of all, melt butter, margarine, or shortening over medium heat in a frying
pan.
Then, crack an egg and pour it into the pan.
Next, sprinkle salt and pepper lightly on the egg.
Wait until the underside is cooked; then, turn the egg over.
Finally, remove the egg when both sides are completely cooked

Give the English equivalents for

Translate into English, using the following words: one-fourth, chocolate syrup, mix,

UNIT 2. ENGLISH MEALS AND TABLE MANNERS

Ex.1. Read the following text, translate it into Russian/Ukrainian and learn new words.

It might be useful for you to know what sort of meals English people have and how
they behave at table, for the people in one country behave rather differently from those
of another. An old proverb says: “When in Rome, do as the Romans do” and this is
good advice.
In many English homes four meals are served: they are breakfast, lunch, tea and
dinner. These are the meals that are served in the homes of the well-to-do people.
Breakfast may be served any time from seven to nine. It consists of porridge
(made of oats or barley, milk, sugar or salt), bacon and eggs, buttered toast or
bread-and-butter with marmalade. Either tea or coffee is drunk at breakfast.
Lunch comes at about one o’clock. It generally consists of cold meat, potatoes
and salad made of lettuce, cucumbers, tomatoes, carrots, beetroots, etc. On the
table are pepper, salt, mustard and sometimes vinegar. After that there is bread or
biscuits and cheese. Most people drink water at lunchtime, some drink beer or wine.
Afternoon tea, taken between four and five, is the most informal meal of the day.
If you are a friend of a family you may drop in for tea without invitation. Very often it
is not served at table. The members of the family and the visitors take tea in the sitting-
room. By the way, do not help yourself to cake first. Bread-and-butter – first, then
cake, if there is any. Another piece of advice: do not put more than one piece of bread
or cake on your plate at the same time.
Dinner is the most substantial meal of the day and is a very formal meal. Many
people even wear special clothes for dinner, so if you are asked out to dinner you
must find out whether you are expected to wear a dinner suit. Dinner is generally
served at about half past seven. The head of the family sits at one end of the table, his
wife sits at the other. If there is a guest he generally sits in the place of honour, which
is at the right of the lady of the house. The first course is soup. Then comes fish. There
is often a knife and fork of special shape by each person foe this course. If you are in
unfamiliar surroundings, keep an eye open for what the others are doing. Remember
the proverb about the Romans!
The next course is the most important, it generally consists of a joint of meat
(beef or lamb) or else a leg of lamb or pork, or it may be chicken or duck. With it are
served various vegetables: peas, beans, cabbage or cauliflower. Some sort of pudding
is generally the fourth course. To show that he has finished with the course, a person
lays his knife and fork on his plate with handles towards him.
After pudding the table is cleared and the dessert is brought. This is fruit of
various kinds and nuts. Port (a red wine from Portugal) is passed round. At this stage
the ladies may get up and retire to the drawing-room. When the ladies rise, the men get
up too, out of respect, and resume their seats when the ladies have left the room.
It mustn’t be imagined that all the English people eat like this. More than 90% of
the English people have their dinner in the middle of the day. In most of the houses
meals are breakfast, dinner, tea, and supper, which is a cold meal for which nothing is
cooked. All these meals are much simpler than those served in the homes of the rich.

Explain the use and the meaning of the word those in “…for the people in one

4. Your daughter/son is asked out to dinner. Give her/him some helpful tips.

Ex.8. Training in reading skills. Read the following text quickly.

1. In Greece you eat Greek food, in France – French food, in Italy – Italian food, but
in England you’ll find Indian, Chinese, French, Portuguese, Turkish, Russian,
Spanish, Polish, Swedish, Indian restaurants. But where are the English
restaurants?
2. Foreign dishes are replacing traditional English food not only in the restaurants.
They prefer cooking pasts to potatoes, eating lasagna to shepherd’s pie.
3. Some people criticize English food. They say it is always boiled to death and
swimming in fat, that it is chips with everything.
4. The British have in fact always imported food from abroad. English kitchen, like
the English language, absorbed ingredients from all over the world – chicken,
rabbits, apples and tea. Another important influence on British cooking was of
course weather. The good old British rain gives rich soil and green grass, and
means that people are people to produce some of the finest varieties of meat, fruit
and vegetables, which don’t need fancy sauces or complicated recipes to disguise
their taste.
5. However, World War II changed everything. Wartime women had to forget 600
years of British cooking, learn to do without foreign products, and use home-
grown food. As a result the British lost confidence in their cooking skills and
began to believe that British food was boring. Nowadays, cooking British is like
speaking a dead language.

If the English can survive their food, they can survive everything!

Even today, well-brought English girls are taught to boil all vegetables for at least a
month and a half, just in case one of the dinner guests comes without his teeth!

UNIT 3. UKRAINIAN CUISINE.

Ex.1. Read the text, translate it into Russian/Ukrainian.

Like Italian cuisine, Ukrainian dishes show a sophisticated simplicity based on pleasing
combination of fresh, natural ingredients. While cooking techniques are not
complicated, dishes may contain a great number of ingredients and unusual
combinations such as vegetables and fruit in the same dish. Food is neither highly
spiced nor bland, but skillfully seasoned to perfection.

Bread, of course, is the mainstay of the Ukrainian diet and it is marvelous. The primary
vegetables are beets, cabbage, cucumbers, potatoes, tomatoes, onions, and beans. These
simple ingredients are transformed into sophisticated combinations of flavour and
texture when spiced with the holy trinity of Ukrainian cuisine – garlic, vinegar, and dill.
Ingredients are seasonal, so much is preserved and pickled to last through the winter.
Pickled cucumbers, cabbage, tomatoes, mushrooms, peppers, and even apples lend
flavour and tartness to many dishes. Salads are very common, not the lettuce-based kind
the Americans eat.
