Kofta In Pita Pockets With Cucumber and Tomato Salad

Dressing:
Ingredients Combine all ingredients in a small bowl. Up to 3T of water can
be added if dressing is too thick.

¼ C sesame tahini (highest quality Refrigerate until needed.

1/8 C finely chopped fresh Salad:
cilantro and mint Combine all ingredients.
1.5 Tbl lemon juice
1Tbl EV olive oil Salt to taste.

Salad
1C chopped English (AKA Kofta:
seedless) cucumber Combine Kofta ingredients in medium bowl.
1C quartered cherry tomatoes
¼ C chopped red onion Brown the Kofta in a fry pan.

Once the meat is done, lay the pita and spread a thin layer of
½ pound ground hamburger
the dressing on the pita.
¼ C minced parsely
½ Tbl minced garlic
Add the salad and Kofta on top.
1 tsp ground coriander
¾ tsp ground cumin
¾ tsp salt
¼ tsp black pepper
¼ tsp allspice
1/8 tsp cardamom
