‫إن اﻟﺒﻄﺎﻃﺎ )‪ (Ipomoea batatas‬ﻣ ﻦ ﻣﺤﺎﺻ ﻴﻞ اﻟﻤﻨ ﺎﻃﻖ اﻟﺪاﻓﺌ ﺔ وﻳﻄﻠ ﻖ ﻋﻠ ﻰ اﻟﻄ ﺮز اﻟﺮﻃﺒ ﺔ ذات‬
‫اﻟﻠﺤﻢ اﻟﺤﻠﻮ ﻟﻔﻆ ‪ Yams‬وﻻ ﻳﺠﺐ ان ﻳﺨﺘﻠﻂ ﻋﻠﻴﻨﺎ هﺬا اﻻﺳﻢ ﻣﻊ اﻟﻴﺎم اﻻﺻﻠﻴﺔ ‪ Dioscorea sp.‬وﻓ ﻰ‬
‫اﻟﺒﻄﺎﻃﺎ ﻓﺎن اﻻﺻﻨﺎف ذات اﻟﻠﺤﻢ اﻟﺒﺮﺗﻘ ﺎﻟﻰ ﺟ ﺪًا ﺗﺤﺘ ﻮى ﻋﻠ ﻰ ﻣ ﺴﺘﻮﻳﺎت أﻋﻠ ﻰ ﻣ ﻦ اﻟﻜﺎروﺗﻴﻨ ﺎت ﻋ ﻦ ﺗﻠ ﻚ‬
‫اﻷﺻﻨﺎف ذات اﻟﺘﻠﻮﻳﻦ اﻟﺒﺮﺗﻘﺎﻟﻰ اﻷﻗﻞ‪.‬‬
‫وﺗﻌﺘﻤ ﺪ اﻟﻨﻜﻬ ﺔ ﻓ ﻰ اﻟﺒﻄﺎﻃ ﺎ ﺑ ﺸﻜﻞ أﺳﺎﺳ ﻰ ﻋﻠ ﻰ ﺗﺮآﻴ ﺰ اﻟﻨ ﺸﺎ واﻟ ﺴﻜﺮ وﺗﺘ ﺄﺛﺮ ه ﺬﻩ اﻟﻤﻜﻮﻧ ﺎت ﺑﺎﻟ ﺼﻨﻒ‬

‫ﻳﺘﻢ ﺣﺼﺎد اﻟﺒﻄﺎﻃﺎ ﻋﻨﺪﻣﺎ ﺗﺼﻞ اﻟﺠﺬور اﻟﻰ اﻟﺤﺠﻢ اﻟﻤﻄﻠﻮب ‪ .‬واﻟﻤﻤﺎرﺳﺔ اﻟﻌﺎﻣﺔ هﻰ وﻗﻒ اﻟﺮى ﻗﺒﻞ‬
‫ﻣﻮﻋﺪ اﻟﺤﺼﺎد ﺑﻔﺘﺮة ‪ 3 – 2‬أﺳﺎﺑﻴﻊ ﺣﺘﻰ ﻳﺒﺪأ اﻟﻌﺮش ﻓﻰ اﻟﺠﻔﺎف ﻗﺒﻞ ازاﻟﺘﻪ وﻗﺒﻞ ﺣﺼﺎد ﺟﺬور اﻟﺒﻄﺎﻃﺎ‪.‬‬

‫إن ﺟ ﺬور اﻟﺒﻄﺎﻃ ﺎ اﻟﺠﻴ ﺪة ﻳﺠ ﺐ ان ﺗﻜ ﻮن ﻧﺎﻋﻤ ﺔ ﻣﺘﻤﺎﺳ ﻜﺔ اﻟﻘ ﻮام ﻣﺘﺠﺎﻧ ﺴﺔ اﻟ ﺸﻜﻞ واﻟﺤﺠ ﻢ وﺧﺎﻟﻴ ﺔ ﻣ ﻦ‬
‫اﻻﺿﺮار اﻟﻤﻴﻜﺎﻧﻜﻴﺔ وﻟﻮن اﻟﺠﻠﺪ ﻣﺘﺠﺎﻧﺲ وﻣﻄﺎﺑﻖ ﻟﻠﺼﻨﻒ‪ .‬وهﻨﺎك أرﺑ ﻊ درﺟ ﺎت ﺟ ﻮدة اﻣﺮﻳﻜﻴ ﺔ ﻟﻠﺒﻄﺎﻃ ﺎ‬
‫‪ US Extra No. 1 , U. S. No. 1 , U. S. commercial , U. S. No. 2‬وﺗﻌﺘﻤ ﺪ اﻟ ﺪرﺟﺎت‬
‫ﻋﻠﻰ ﺧﻠﻮ اﻟﺪرﻧﺎت ﻣﻦ اﻟﻌﻴﻮب )ﺑﻘﺎﻳﺎ ﺗﺮﺑﺔ – ﻧﻤﻮات ﺟﺬرﻳﺔ – آﺪﻣﺎت – ﺗﺸﻘﻘﺎت ﻧﻤﻮ – ﺗ ﺪهﻮر ﻣﺮﺿ ﻰ –‬
‫ﺣﺸﺮات واﻣﺮاض ( آﻤﺎ ﺗﻌﺘﻤﺪ ﻋﻠﻰ اﻟﺤﺠﻢ واﻟﻮزن آﻔﺌﺎت ﺟﻮدة‪.‬‬
‫درﺟﺔ اﻟﺤﺮارة اﻟﻤﺜﻠﻰ ‪Optimum Temperature‬‬

‫ان اﻟﻈﺮوف اﻟﻤﻮﺻﻰ ﺑﻬ ﺎ ﻓ ﻰ اﻟﺘﺨ ﺰﻳﻦ اﻟﺘﺠ ﺎرى ه ﻰ ان ﺗﺤﻔ ﻆ ﺟ ﺬور اﻟﺒﻄﺎﻃ ﺎ ﺑ ﺎردة وﺟﺎﻓ ﺔ ‪ .‬ان ﺟ ﺬور‬
‫اﻟﺒﻄﺎﻃﺎ ﺣﺴﺎﺳﺔ ﻟﻠﺘﺒﺮﻳﺪ وﻳﺠ ﺐ ان ﻳ ﺘﻢ ﺗﺨﺰﻳﻨﻬ ﺎ ﺑ ﻴﻦ ‪° 15 – 12.5‬م ﻣ ﻊ رﻃﻮﺑ ﺔ ﻧ ﺴﺒﻴﺔ ﻋﺎﻟﻴ ﺔ )أﻋﻠ ﻰ ﻣ ﻦ‬
‫‪ .(%90‬وﻳﻤﻜ ﻦ ان ﻧﺘﻮﻗ ﻊ اﻟﺤ ﺼﻮل ﻋﻠ ﻰ ﻓﺘ ﺮة ﺗﺨ ﺰﻳﻦ ﻣ ﻦ ‪ 6‬اﻟ ﻰ ‪ 10‬ﺷ ﻬﻮر ﺗﺤ ﺖ ه ﺬﻩ اﻟﻈ ﺮوف ﻋﻠ ﻰ‬
‫اﻟﺮﻏﻢ ﻣﻦ ان اﻟﺘﺰرﻳﻊ ﻗﺪ ﻳﺒﺪأ ﺑﻌﺪ ‪ 6‬ﺷﻬﻮر ﻣﻦ اﻟﺘﺨﺰﻳﻦ وﻳﺘﻮﻗﻒ ذﻟﻚ ﻋﻠﻰ اﻻﺻﻨﺎف‪ .‬ان درﺟﺎت اﻟﺤ ﺮارة‬
‫أﻋﻠﻰ ﻣﻦ ‪° 15‬م ﻳﺆدى اﻟﻰ ﺳﺮﻋﺔ اﻟﺘﺰرﻳﻊ وﻓﻘ ﺪ اﻟ ﻮزن‪ .‬ان اﻟﻌﻨﺎﻳ ﺔ ﺑﺘ ﺪاول اﻟﺒﻄﺎﻃ ﺎ أﺛﻨ ﺎء اﻟﺤ ﺼﺎد ﺳ ﻮف‬
‫ﺗﻘﻠ ﻞ ﻣ ﻦ اﻻﺿ ﺮار اﻟﻤﻴﻜﺎﻧﻜﻴ ﺔ ﺑﻘ ﺸﺮة اﻟﺠ ﺬور وﺗﻘﻠ ﻞ ﻣ ﻦ اﻟﺘ ﺪهﻮر اﻟﻤﺮﺿ ﻰ ﺧ ﻼل ﻓﺘ ﺮة اﻟﺘﺨ ﺰﻳﻦ‪ .‬ﻻ ﻳ ﺘﻢ‬
‫ﻏﺴﻴﻞ اﻟﺒﻄﺎﻃﺎ ﻗﺒﻞ ﺗﺨﺰﻳﻨﻬﺎ ﻓﻰ ﻋﺒﻮات اﻟﺘﺨﺰﻳﻦ اﻟﻜﺒﻴﺮة ‪ bins‬أو اﻟﺼﻐﻴﺮة ‪ crates‬وﻟﻜﻦ اﻟﻐ ﺴﻴﻞ ﻳ ﺘﻢ ﺑﻌ ﺪ‬
‫اﻟﺘﺨﺰﻳﻦ وﻳﺘﻢ اﻻﺧﺘﻴ ﺎر واﻟﺘﻌﺒﺌ ﺔ ﻟﻠﺘ ﺴﻮﻳﻖ‪.‬وﻋ ﺎدة ﻳ ﺘﻢ اﻟﺘﺨ ﺰﻳﻦ اﻟﺘﺠ ﺎرى ﻟﻠﺒﻄﺎﻃ ﺎ ﻓ ﻰ ﻣﺨ ﺎزن ﻳ ﺘﻢ ﺗﺒﺮﻳ ﺪهﺎ‬
‫ﺑﺎﻟﺘﺒﺨﻴﺮ وﻳﺪﻋﻤﻬﺎ ﺗﺒﺮﻳﺪ ﻣﻴﻜﺎﻧﻴﻜﻰ ﻻ ﻳﺴﺘﺨﺪم ﻓﻰ ﺁﺧﺮ ﻓﺘﺮة اﻟﺘﺨﺰﻳﻦ ﺣﻴﺚ ﺗﺮﺗﻔﻊ ﺣﺮارة اﻟﺠﻮ‪.‬‬

‫اﻟﺮﻃﻮﺑﺔ اﻟﻨﺴﺒﻴﺔ اﻟﻤﺜﻠﻰ ‪Optimum relative humidity‬‬

‫أآﺜﺮ ﻣﻦ ‪ % 95‬ﺑﺎﻟﻨﺴﺒﺔ ﻟﻠﺘﺨ ﺰﻳﻦ ﻟﻔﺘ ﺮات ﻃﻮﻳﻠ ﺔ و ‪ % 90 – 70‬ﻓ ﻰ ﺣﺎﻟ ﺔ اﻟﺘﺨ ﺰﻳﻦ ﻟﻔﺘ ﺮات ﻗ ﺼﻴﺮة ﻣ ﻦ‬
‫أﺟﻞ اﻟﺘﺴﻮﻳﻖ‪.‬‬

‫ان ﺟﺬور اﻟﺒﻄﺎﻃﺎ ﺗﻨﺘﺞ آﻤﻴﺎت ﻣﻨﺨﻔﻀﺔ ﺟﺪًا ﻣﻦ اﻻﺛﻴﻠﻴﻦ )ﺣﻮاﻟﻰ ‪ 0.1‬ﻣﻴﻜﺮوﻟﻴﺘﺮ ‪ /‬آﺠﻢ ﻓ ﻰ اﻟ ﺴﺎﻋﺔ ( اﻻ‬
‫ان آﻤﻴﺎت أآﺒﺮ ﻣﻦ ذﻟﻚ ﻳ ﺘﻢ اﻧﺘﺎﺟﻬ ﺎ ﻓ ﻰ ﺣﺎﻟ ﺔ ﺣ ﺪوث اﺿ ﺮار اﻟﺘﺒﺮﻳ ﺪ واﻟﺘ ﺪهﻮر اﻟﻤﺮﺿ ﻰ ‪ .‬ان اﻟﺘﻌ ﺮض‬
‫ﻟﻼﺛﻴﻠﻴﻦ )‪ 10 – 1‬ﺟﺰء ﻓﻰ اﻟﻤﻠﻴﻮن( ﻳﺰﻳﺪ ﻣﻦ ﻣﻌﺪﻻت اﻟﺘﻨﻔﺲ وﺗﻤﺜﻴﻞ اﻟﻔﻴﻨﻮﻻت وﻳ ﺆﺛﺮ ﺳ ﻠﺒﻴًﺎ ﻋﻠ ﻰ اﻟﻨﻜﻬ ﺔ‬
‫واﻟﻠﻮن ﻓﻰ اﻟﺒﻄﺎﻃﺎ ﺑﻌﺪ اﻟﻄﻬﻰ‪.‬‬

‫اﻻﺳﺘﺠﺎﺑﺎت ﻟﻠﺠﻮ اﻟﻬﻮاﺋﻲ اﻟﻤﺘﺤﻜﻢ ﻓﻴﻪ ‪Responses to CA‬‬

‫ﻻ ﻳﻮﺟﺪ ﺗﻄﺒﻴﻖ ﺗﺠﺎرى ﻻﺳﺘﺨﺪام اﻟﺘﺨﺰﻳﻦ ﻓ ﻰ ﺟ ﻮ ه ﻮاﺋﻰ ﻣ ﺘﺤﻜﻢ ﻓﻴ ﻪ ﺑﺎﻟﻨ ﺴﺒﺔ ﻟﻠﺒﻄﺎﻃ ﺎ وﻳﻼﺣ ﻆ ان ﻣﻌ ﺪل‬
‫ﺗﻨﻔﺲ اﻟﺒﻄﺎﻃﺎ ﻳﻨﺨﻔﺾ ﻋﻨﺪ ﺗﻘﻠﻴﻞ ﺗﺮآﻴﺰ اﻻوآﺴﺠﻴﻦ ﻣﻦ ‪ .%3 – 20‬آﻤﺎ ان اﻻوآ ﺴﺠﻴﻦ أﻗ ﻞ ﻣ ﻦ ‪ %3‬ﻗ ﺪ‬
‫ﻳﺰﻳﺪ ﻣﻦ ﻣﻌﺪﻻت اﻟﺘﻨﻔﺲ ﺑﺴﺒﺐ ﻋﻤﻠﻴﺎت اﻟﺘﺨﻤﺮ ﻓﻰ اﻟﺘﻤﺜﻴﻞ اﻟﻐﺬاﺋﻰ‪ .‬وﻣ ﻦ ﻏﻴ ﺮ اﻟﻤﻌ ﺮوف ﻃﺒﻴﻌ ﺔ اﺳ ﺘﺠﺎﺑﺔ‬
‫ﺟﺬور اﻟﺒﻄﺎﻃﺎ ﻟﻠﻤﺴﺘﻮﻳﺎت اﻟﻤﺮﺗﻔﻌﺔ ﻣﻦ ﺛﺎﻧﻰ أآﺴﻴﺪ اﻟﻜﺮﺑﻮن‪.‬‬
‫‪Physiological Disorders‬‬ ‫اﻷﺿﺮار اﻟﻔﺴﻴﻮﻟﻮﺟﻴﺔ‬

‫ﺿﺮر اﻟﺘﺒﺮﻳﺪ ‪ : Chilling injury‬إن ﺟﺬور اﻟﺒﻄﺎﻃﺎ ﺣﺴﺎﺳﺔ ﻻﺿﺮار اﻟﺘﺒﺮﻳﺪ ﻋﻠﻰ درﺟﺎت ‪°12.5‬م أو‬
‫أﻗﻞ وﺗﺸﻤﻞ ﻣﻈﺎهﺮ اﺿﺮار اﻟﺘﺒﺮﻳﺪ ﺣﺪوث اﻟﺘ ﺪهﻮر اﻟﻤﺮﺿ ﻰ ﺑﺎﻟﻔﻄﺮﻳ ﺎت واﻟﺘﻠ ﻮﻳﻦ اﻟﺒﻨ ﻰ اﻟ ﺪاﺧﻠﻰ وذﺑ ﻮل‬
‫ﺟﺬور اﻟﺒﻄﺎﻃﺎ‪ .‬وﻋﻨﺪ ﻃﻬﻰ ﺟﺬور اﻟﺒﻄﺎﻃﺎ اﻟﺘﻰ ﺗﻌﺮﺿﺖ ﻻﺿﺮار اﻟﺘﺒﺮﻳﺪ ﻗﺪ ﻳﺘﻜﻮن ﺑﻬﺎ ﻣ ﺎ ﻳﻌ ﺮف ﺑﺎﻟﻘﻠ ﺐ‬
‫اﻟﺼﻠﺐ ‪ hardcore‬وﻳﺼﺒﺢ ﻟﻮن اﻻﻧﺴﺠﺔ داآﻨًﺎ ﺑﺪرﺟ ﺔ واﺿ ﺤﺔ ﻋﻨ ﻪ ﻓ ﻰ ﺣﺎﻟ ﺔ اﻟﺠ ﺬور اﻟﺘ ﻰ ﻟ ﻢ ﺗﺘﻌ ﺮض‬
‫ﻻﺿﺮار اﻟﺘﺒﺮﻳﺪ‪.‬‬

‫اﻷﺿﺮار اﻟﺒﺎﺛﻮﻟﻮﺟﻴﺔ ‪Pathological Disorders‬‬

‫إن ﺣﺪوث اﺿﺮار اﻟﺘﺒﺮﻳ ﺪ واﻻﺿ ﺮار اﻟﻤﻴﻜﺎﻧﻜﻴ ﺔ ﻓ ﻰ ﺟ ﺬور اﻟﺒﻄﺎﻃ ﺎ ﻳﻤﻬ ﺪ ﻻﺻ ﺎﺑﺘﻬﺎ ﺑﺎﻟﺘ ﺪهﻮر اﻟﻤﺮﺿ ﻰ‬
‫ﺧﺎﺻﺔ اﻟﻌﻔﻦ اﻟﻄﺮى ﻟﻔﻄﺮ ‪ . Rhizopus‬وﻗﺪ ﺗﺴﺘﺨﺪم ﻣﺒﻴﺪات ﻓﻄﺮﻳﺔ ﺑﻌﺪ اﻟﺤﺼﺎد ﻟﺘﻘﻠﻴﻞ ﻣﺨﺎﻃﺮ اﻻﺻ ﺎﺑﺔ‬
‫ﺑﺎﻟ ـ ‪ Rhizopus‬أﺛﻨ ﺎء اﻟﺘ ﺴﻮﻳﻖ‪ .‬وهﻨ ﺎك ﻣ ﺴﺒﺒﺎت ﻣﺮﺿ ﻴﺔ ﻓﻄﺮﻳ ﺔ ﻋﺪﻳ ﺪﻩ وﻣﻨﻬ ﺎ اﻟﻌﻔ ﻦ اﻻﺳ ﻮد‬
‫‪ Ceratocystis‬وﻋﻔﻦ اﻟﻔﻴﻮزارﻳﻮم وﺗﻌﺘﺒﺮ ﻋﻤﻠﻴﺔ اﻟﻌﻼج اﻟﺘﺠﻔﻴﻔﻰ ﻣﻦ اﻻﺟﺮاءات اﻟﺮﺋﻴ ﺴﻴﺔ ﻟﻤﻘﺎوﻣ ﺔ ه ﺬﻩ‬
‫اﻟﻔﻄﺮﻳﺎت وﻓﻰ ﺣﺎﻟﺔ ﻣﻨﺎﻃﻖ اﻻﻧﺘﺎج اﻟﺪاﻓﺌﺔ اﻟﺮﻃﺒ ﺔ ﻳﻤﻜ ﻦ ان ﺗﻜ ﻮن اﻻﻋﻔ ﺎن اﻟﺒﻜﺘﻴﺮﻳ ﺔ ﺳ ﺒﺒًﺎ ﻓ ﻰ اﻟﻔﺎﻗ ﺪ ﺑﻌ ﺪ‬
‫اﻟﺤﺼﺎد‪.‬‬

‫اﻟﻌ ﻼج اﻟﺘﺠﻔﻴﻔ ﻰ ‪ : curing‬إن اﻷﺿ ﺮار اﻟﺘ ﻰ ﺗﺤ ﺪث ﻓ ﻰ ﻃﺒﻘ ﺔ اﻟﺒﺮﻳ ﺪﻳﺮم ﻓ ﻰ ﺟ ﺬور اﻟﺒﻄﺎﻃ ﺎ ﺳ ﻬﻠﺔ‬
