Ingredients
For the Cake:
2 cups (250g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1/2 cup (115g) unsalted butter, softened
3/4 cup (150g) granulated sugar
1/4 cup (50g) brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup (120ml) milk or buttermilk
2 large apples, peeled, cored, and diced (about 2 cups)
For the Topping (Optional):
1/4 cup (50g) brown sugar
1 teaspoon ground cinnamon
1/4 cup (30g) chopped nuts (walnuts or pecans)
Instructions
Preheat and Prepare
Preheat your oven to 350°F (175°C).
Grease and lightly flour a 9-inch (23cm) round or square cake pan.
Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, salt,
cinnamon, and nutmeg. Set aside.
Cream Butter and Sugar
In a large bowl, use a hand mixer or stand mixer to cream the butter,
granulated sugar, and brown sugar together until light and fluffy (about 2-3
minutes).
Add Wet Ingredients
Beat in the eggs one at a time, then add the vanilla extract.
Combine Wet and Dry Ingredients
Add the dry ingredients to the wet mixture in three additions, alternating
with the milk (start and end with the dry ingredients).
Fold in the diced apples with a spatula until evenly distributed.
Pour Batter into Pan
Spread the batter evenly into the prepared pan.
Add Topping (Optional)
In a small bowl, mix brown sugar, cinnamon, and nuts. Sprinkle over the
batter.
Bake
Bake for 35–40 minutes, or until a toothpick inserted into the center comes
out clean.
Cool and Serve
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire
rack to cool completely.
Serve plain or with a dollop of whipped cream or a scoop of vanilla ice
cream.
