Sinigang
Ingredients
750 g beef cubes (e.g. braising steak)
1 large pitcher full of filtered water
4 tablespoons cooking oil
4 sinigang cubes
1 beef bouillon cube
1 large onion, chopped
3 cloves garlic, crushed
1 large eggplant, sliced into even-size chunks
1 radish, sliced into even-size chunks
2 large tomatoes, quartered
2 handfuls spinach
Method
1. Heat the largest cooking pot over medium heat, then add 2 tablespoons of oil.
2. Add the garlic and onions and cook for about 5 minutes until starting to soften.
Remove from pot and reserve.
3. Add 2 tablespoons oil to the pot, then add the meat to brown.
4. Add all the water in the pitcher, followed by the sinigang and beef bouillon cubes,
and the chillis. Cover and bring to a simmer for 45 minutes. Do not allow to boil or it
will toughen the meat.
5. Add the eggplant and cover. Simmer for 15 minutes.
6. Add the radish, gabi and cooked garlic and onions and cover. Simmer for 10
minutes.
7. Add the tomatoes and cover. Taste for flavor. Simmer for 10 minutes.
8. Turn off the heat and add the spinach. Stir and cover for 5 to 10 minutes until all
the vegetables are done.
