Job description of galley stewart ?
• job description is having responsible to maintenance keep cleanliness in the kitchen expecialy in the
galley area as like potwash, dishwash, galley area, hot kitchen, cool kitchen, and then clining the
silverware, chinasware, glassware, and sanitizing as well
What is galley steward ?
• person who has responsible to clean all dirty equipment from the kitchen
Basic duties of galley steward or kitchen cleaner ?
• cleaning, sanitizing, and maintaining of cleanliness galley/kitchen area
Galley area ?
• potwesh, dishwash, cooking area, food preparation area, hot & cold kitchen, pantry, cleaning locker,
chiller, exhaust, etc
What is potwash ?
• the area to clean all the dirty equipment from galley or kitchen
What is dishwash ?
• the area to clean all dirty dishes from the restaurant
Kitchen equipment ?
• stove, salamander, grill, chiller, oven, bil marry, exhaust, deepfryer, fridge, post, pans
Kitchen untenzil ?
• spatula, ladle, knive, cutting board, sharpened knife, serving spoon, stirrer, cheese grater

How do you clean the dirty dishes using the dishwashing machine ?
How to oprate diswashing machine ?
* wear PPE
* turn on the machine
* spray all dirty dishes to remove food over left
* put/arrange on the rack & do pre-wash
* push the rack into the machine
* wait till cleaning process is finish
* take out the clean dishes from the machine, put in the proper rack

* water ( 150*c - 180*c )
* rinse ( 210*c)
* sanitize ( 250*c)
How to turn on the diswashing mechine ?
* first make sure mechine is good condition
* swith ON the mechine and cek the temperature of water
* cek the chemical is full and complite

Explain the garbage separation bins ?
The are four color garbage
• yellow garbage bin : using for food waste only
• grey garbage bin : using for solid waste
example : plastik, paper, broken glass, wood
• blue garbage bin : using for can only
• red garbage bin : using for hazardous waste/human waste
example : used injection, tampon, pampers, condom, vomit, etc
How do you cleaning the grill ?
* use PPE
* turn on the grill/preheat the grill and spray chermical
(grease cutter/lime away/oven blaster) over the grill surface, wait for few minute.
* trun off the grill, and start scrub it with scapper/ metal brush.
* wipe it with the dum cleaning cloth to remove the dirty.
How do you cleaning the deepfriver ?
* use PPE
* turn off the machine and empty the container from oil.
* scrub it with water and soap, properly outside and inside the deep friyer.
* wipe and dry with clean cleaning cloth
How do you cleaning the stove/bil mary/salamander ?
* use PPE
* wipe the surface around the stove to remove the diry/ food waste.
* spray water and soap to all stove surfaces, then scrub it.
* wipe and dry with the clean cloth.
How do you cleaning the chopping/ cutting board ?
* wipe the cutting/ chopping board te remove the left over meat/ food that stick on the board.
* spray the water and soap then scrub it.
* rinse it with warm or cold water then sanitize with, sanitizer.
* wipe and try with clean cleaning cloth.

How to cleaning the floor ?
* prepare bucket, mopstik, yellow sign
* fill the warm water & detergent in the bucket
* put yellow sign on the floor
* and we can start mopping until clean
Clean/scrub the hard floor in the galley area :
* wear PPE and put the caution sign.
* apply water and soap using mopstick to the floor then scrub it properly.
* rinse the floor with warm/ cold water then squezze the water.
* sanitize with bleach using mopstick.
* dry it with clean mopstick or blower.
What is P.P.E stand for ?
• personal protection equipment
As like hand gloves, masker, googles, helment, safety shoes, earplug, apron

No!! It will be dangerous for our safety, because every chemical has a different purpose.

I will put a side that chernical bottle and report to the supervisor immediately.
Why we always try to maintain the area clean, neat, tidy & santized ?
* to avoid cross contamination.
* to make the area look clean, smell fresh, so the guest will feel happy, comfortable, satisfy and
secure.
Can tell me your activity before working in the hotel until finish working ?
• the first before working in the hotel i have to clock in at security office after that i go to the linen and
collect the uniform , and go to locker to change uniform after that i go to food and beverage for small
briefing . After finish i can start working until 12 clock and break 1 hour after that i back go to
working again until 5 clock after finish working make sure we have to put dirty uniform to the
laundry and before go home i have to clock out again at security office that's my activity working in
the hotel .

* daily worker fix schedule but not get service cass
* staff fix schedule & get service cass with full benevit from hotel

• yes i have experience before on the job training ( max one ) during six month as galley steawerd and
after that continued daily wolker at ( max one ) during more than one years as galley steawerd .
