SOCHNIKI

For the dough:


Wheat flour - 300 g
Butter - 125 g
Sugar - 75 g
Chicken eggs - 1 pc.
Sour cream - 2 tbsp.
Leavening agent - 1/2 tsp.
Salt - 1/3 tsp.

For the filling:
Curd - 300 g
Sugar - 60 g (or to taste)
Egg yolk - 1 pc.
Wheat flour - 1-1,5 tablespoons
Vanilla sugar - 1/2 tsp.

Yolk - 1 pc.
Water - 1 tsp.

1.​ First, let's prepare the dough. To do this, mix flour with baking powder. Rub soft
butter with sugar.

2.​ To the butter mixture add egg, salt, sour cream and mix with a mixer until
homogeneous.

3.​ Add all the flour at once and quickly knead a delicate homogeneous dough. Put it
in the refrigerator for 1 hour.

4.​ For the cottage cheese filling, mix all the ingredients and thoroughly knead with a
fork. (It is better not to use a blender, so as not to "liquefy" the filling.)

5.​ Divide the chilled dough into 9 parts. Roll each one into a 0.5 cm thick flatbread.
Put a full tablespoon of filling on one half and cover with the other half of the
dough.
Place the pancakes on a baking tray covered with parchment and brush with egg
yolk and 1 tsp of water.

6.​ Bake the pancakes in an oven preheated to 200°C for 25-30 minutes. After 15
minutes reduce the temperature to 180 ° C. Sprinkle with powdered sugar when
ready.
