Before we Begin…

A sip of history
Beer is one of the oldest beverages in the world, dating back around 7,000 years. The earliest
evidence of beer production comes from ancient Mesopotamia (modern-day Iran) around
5,000 BCE, where traces of fermented cereal grains were found.

Things to note:
BLG (degrees Plato) stands for the % sugar content in wort, before the fermentation.
A higher BLG indicates more fermentable sugars, leading to higher potential alcohol content.
A wort with a high BLG (e.g., 16-18°BLG) will typically result in a stronger beer (higher ABV),
while a lower BLG (e.g., 10-12°BLG) will produce a lighter beer with lower alcohol content.
In essence, BLG gives brewers control over the final beer's strength, sweetness, and
mouthfeel.
EBC stands for Colour Units EBC (European Brewery Convention) and it is the method
established by the European Brewery Convention for assessing the colour of wort or beer.

ABV stands for Alcohol by Volume. The bigger the percentage, the stronger the beer.

American Pale Ale


12° BLG / ABV 4.5%

APA (American Pale Ale) is a hop-forward,


balanced beer style known for its refreshing
bitterness, moderate malt sweetness, and vibrant
citrus aromas.

Cultivating the tradition all Hops used in the


brewing process are of American origin. That
includes Summit™ (USA), Willamette (USA),
Ekuanot® (USA), and Comet (USA), which
contribute to its distinctive flavours of citrus, floral,
and fruity notes.

These hops create a well-rounded profile, offering


a blend of fruity brightness with a subtle herbal
and spicy undertone, making APA a highly
drinkable and versatile beer.

The beer is slightly hazy in appearance, with a golden to amber colour. EBC used to describe
the colour of the beer ranges between 10 to 18 EBC.
It is best served at a temperature of around 8-10°C, allowing the hop aromas
and malt flavours to fully develop.
Slight sediment may be present due to no filtering.
Beer is usually served in a Nonic Pint Glass.
Blonde Beers

English India Pale Ale


14° BLG / ABV 5.2%

English IPA (India Pale Ale) is a classic style of


India Pale Ale with a history dating back to the
19th century, when beer from England was
shipped to India. To ensure the beer survived
the long sea journey in good condition, it was
heavily hopped.

English IPA features traditional hop varieties,


resulting in a pronounced bitterness with a
pleasant spicy and fruity aroma.

Common hops used in an English IPA include


Willamette (USA), Challenger (UK), and Fuggles
(UK), which give the beer its signature earthy,
herbal, and slightly fruity notes.

The beer is typically clear to slightly hazy. It has an EBC (European Brewery Convention) of
around 12 to 28 EBC, offering a golden to amber colour.
It is best served at a temperature of 10-13°C to enhance the hop flavours.
Sedimentation may be present due to bottle-conditioning.
The beer is usually served in a Nonic Pint Glass.
Blonde Beers

Belgian Pale Ale

Belgian Pale Ale is a light, copper-coloured


beer originating from the regions of Antwerp
and Brabant, known for its distinctly malty and
moderately fruity flavour. The combination of
mild hopping and a malt-forward base gives
this beer a smooth, slightly sweet flavour with
a delicate fruity undertone.

Not overly hopped, this beer is refreshing yet


satisfying, making it a balanced and enjoyable
choice.

Hops used include Marynka (PL) and Fuggles


(UK), which provide subtle earthy, herbal, and
mild bitterness, allowing the malt flavours to
shine.

Belgian Pale Ale is typically clear in appearance, with minimal haze.


The beer has an EBC of 16 to 30, giving it a light copper to amber colour.
It is best served at a temperature of around 7-10°C, which enhances both its
malt sweetness and fruity notes.
It is traditionally served in a Tulip Glass.
Blonde Beers

Bitter
10° BLG / ABV 4.0%

English Bitter is a light and refreshing, dark-amber


ale characterized by a solid dryness and bitterness,
coming from a generous amount of hop bitterness.
It’s one of the simplest beers to brew using the
mashing method and a staple in every pub across
the UK.

The malt sweetness is well-balanced with assertive


hop bitterness, resulting in a dry, crisp finish. Fruity
esters from the yeast and low alcohol content make
it an ideal session beer.

This version of English Bitter features Comet (DE)


and Warrior (USA) hops, which bring a bold
bitterness with earthy notes and subtle citrus
undertones.

English Bitter is typically clear, with a deep amber hue that showcases its rich malt base. The
colour of the beer ranges from 12 to 36 EBC, giving it a dark amber to deep copper
appearance.

Blonde Beers

Weizen
13° BLG / ABV 5.0%

Weizen, the most classic wheat beer, originally


brewed in Bavaria, is known for its rich, refreshing
body, high carbonation, and minimal bitterness. It
features a generous, long-lasting white head,
making it a visually appealing and flavourful beer
for a variety of occasions.

The taste, like the aroma, is dominated by clove


and banana notes, created by the special yeast
used in fermentation. It’s light, fruity, and slightly
sweet, with a soft finish.

Weizen includes Lubelski (PL) hops, which


contribute a mild, herbal bitterness that allows the
wheat and yeast character to dominate.

The beer is Hazy due to the unfiltered nature of the beer, with yeast and wheat proteins
contributing to its characteristic cloudiness. The colour of the beer ranges from 4 to 16 EBC,
giving it a pale to light gold hue.
Best served at 6-8°C, which brings out the unique characteristics of the style.
Noticeable sediment is present due to the unfiltered yeast,
which contributes to its signature appearance and flavour.

Dark Beers

Dry Stout
12° BLG / ABV 4.5%

Dry Stout is a dark, light-bodied, and dry beer with


a distinct roasted flavour, often reminiscent of
coffee. This style, popularized by Irish breweries
like Guinness, offers a bold taste with hints of
bitter chocolate or roasted grains, making it a
classic in the stout category.

The dominant flavors are roasted malts, delivering


notes of bitter chocolate and coffee, with a dry,
slightly astringent finish. Despite its dark
appearance, it has a surprisingly light body.

Dry Stout typically includes Willamette (USA) hops,


which provide a mild, earthy bitterness that
complements the roasted malt flavors.

The beer is opaque, with a deep black color that doesn’t allow light to pass through. The
color ranges from 50 to 80 EBC, giving the beer its signature deep brown to nearly black
appearance.
Best served at 7-10°C, which brings out the roasted malt flavors without masking its subtle
bitterness.
Minimal sedimentation, as most Dry Stouts are well-filtered

toasted grains. The beer is well-balanced, neither
too sweet nor too bitter, making it an enjoyable
and nourishing choice.

Brown Ale uses Challenger (UK) and Warrior (USA)


hops, which provide a balanced, earthy bitterness
with subtle herbal and spicy notes, complementing
the malty base.

Brown Ale is typically clear, with a deep amber to brown colour. The beer ranges from 35 to
70 EBC, resulting in a light brown to deep chestnut colour.
Best served at 10-13°C, allowing the malt complexity and mild bitterness to fully develop.
Minimal sediment is present.

Imperial Saison

Imperial Saison is a stronger, bolder version of the


traditional Belgian Saison, known for its refreshing,
highly carbonated, and dry character. While still
light and fruity, the imperial strength gives it a

a complex yet invigorating beer.

The beer is phenolic and fruity-spicy, with a touch


of earthiness from the hops. It often has a slightly
higher acidity, with a dry, crisp finish, and the
imperial strength contributes to a fuller mouthfeel
and increased alcohol warmth.
