ADOBO RECIPE
Adobo is a classic Filipino dish known for its rich, savory, and slightly tangy flavor. The most
common version is chicken adobo, but you can also use pork, beef, or even seafood. Here’s a
simple recipe for Chicken Adobo:
Ingredients:
   •   1 kg (2.2 lbs) chicken (thighs and drumsticks work best)
   •   1/2 cup soy sauce
   •   1/4 cup vinegar (white vinegar or cane vinegar)
   •   5 cloves garlic (minced or crushed)
   •   1 onion (sliced, optional)
   •   2 bay leaves
   •   1 tsp black peppercorns (or ground black pepper)
   •   1 tbsp sugar (optional, for balance)
   •   1/2 cup water
   •   2 tbsp cooking oil
   •   (Optional) Sliced potatoes or hard-boiled eggs
Instructions:
   1. Marinate the Chicken (Optional but Recommended)
           o    In a bowl, mix the chicken, soy sauce, half of the garlic, and black pepper. Let it
                marinate for at least 30 minutes or up to overnight in the fridge.
   2. Sauté the Aromatics
           o    Heat oil in a pan or pot over medium heat.
           o    Sauté the remaining garlic and onions (if using) until fragrant.
   3. Brown the Chicken
           o    Add the marinated chicken (reserve the marinade) and sear until slightly
                browned on both sides.
   4. Simmer with Sauce
      o   Pour in the reserved marinade, vinegar, bay leaves, sugar, and water. Do not stir
          yet (to avoid raw vinegar taste).
      o   Let it simmer uncovered for about 10 minutes.
5. Stir and Continue Cooking
      o   Stir the sauce, cover, and let it cook for another 20–30 minutes or until the
          chicken is tender.
      o   If you prefer a thicker sauce, let it reduce uncovered.
6. Optional Additions
      o   Add potatoes halfway through cooking or mix in hard-boiled eggs at the end.
7. Serve and Enjoy
      o   Serve hot with steamed rice!
