BUGANDA (Central Uganda) –
Matoke
Ingredients ( serving for 1
person)
5 green bananas peeled and cut into 2-inch chunks
2 tablespoons avocado oil
1 small onion chopped
3 cloves garlic minced
1 teaspoon fresh grated ginger
2 teaspoons curry powder
1/2 medium red bell pepper chopped
3 medium tomatoes chopped
1/2 cup cilantro chopped
1-2 vegan bouillon cubes
2 cups water
1/4 teaspoon Cayenne pepper optional
Instructions
1.Peel the bananas; then cut them into two-inch pieces and place
them inside salted water to avoid discoloration when they come
into contact with air.
2.Place a saucepan over medium heat and add avocado oil to it.
Once the oil is hot, add chopped onion and cook for about 2
minutes or until they are translucent and soft. Next, garlic, ginger,
bell pepper, and tomatoes and continue to cook for 2 more
minutes.
3. Now, add curry powder, cayenne pepper, bouillon cube, and
cilantro, and mix well. Cook for a minute or two until spices are
fragrant.
4. Add the green bananas and mix well.
5. Pour water and stir. Bring the mixture to a boil and cover the
saucepan with a lid. Reduce the heat and let the mixture simmer
for about 25 minutes or until the green bananas are tender.
6. Season with salt and cayenne pepper to taste. Then enjoy!
BASOGA (Eastern Uganda)- Atapa
Ingredients
2 brunches atipa
1 bunch mrenda
1 chopped onion
cooking oil
salt
Instructions
1. Wash the bunches using running water and then
separate the leaves from the stem.
2. Cut the leaves into pieces then place a clean cooking pot
on heat and add one cup water.
3. Add a table spoonful of baking powder to the water and
heat to boil.
4. Add the chopped vegetables in the mixture and allow to
boil for 5 min before stirring.
5. Continue stirring as u heat till it forms a soft, slippery
mixture then remove it from the heat.
6. Place a clean frying pan on heat and add oil and onions
then leave to fry till onions are golden Brown.
7. Add the vegetables to the oil and onions and stir well.
add milk and salt to taste then allow to cook for 5 min
before serving hot with ugali.
ACHOLI (Northern Uganda) -
Malakwang And Sweet Potatoes
INGREDIENTS
Malakwang in peanut butter sauce
140 grams Dry Malakwang
140 grams smooth peanut butter
1/4 tin tomatoes
half tsp salt
0.3 litres water Add as needed
Boiled Sweet Potatoes
250 mg Fresh Ugandan sweet potatoes
0.3 litre water
INSTRUCTIONS
1. Boil water in a pan.
2. Add the dry malakwang leaves.
3. Cook for 15 minutes
4. Test for softness by pressing a bit of leaves against the wooden
spoon.
5. Drain out the first water completely.
6. Add fresh hot water.
7. Add tomatoes 1 and ½ potatoes.
8. Boil for 5 minutes.
9. Add salt and mix well.
10. Add peanut butter.
11. Serve while still hot and eat with sweet potatoes.
12. Can be eaten with millet bread, maize meal and boiled. cassava.
BOILED SWEET POTATOES
1. Peel the sweet potatoes.
2. Wash thoroughly.
3. Cut them at desired sizes.
4. Boil in a large enough saucepan for 20 - 25 minutes.
5. Poke with a knife or skewer to test for softness.
6. Serve with malakwang.
