Instructions:

1. Prepare the Crust:

Preheat oven to 325°F (160°C).

Mix graham cracker crumbs, sugar, melted butter, and salt in a bowl.

Press firmly into the bottom of a 9-inch springform pan.

Bake for 10 minutes, then let cool while preparing the filling.

2. Make the Filling:

Beat cream cheese until smooth (about 2-3 minutes).

Add sugar and mix well.

Blend in sour cream, vanilla, and lemon juice.

Add eggs one at a time, mixing just until combined (don’t overmix!).

3. Bake the Cheesecake:

Pour filling over the crust.

Bake at 325°F (160°C) for 50-60 minutes until edges are set but the center is
slightly jiggly.

Turn off the oven, crack the door, and let it cool inside for 1 hour to prevent
cracking.

Chill in the fridge for at least 4 hours (preferably overnight) before serving.

4. Serve & Enjoy!

Run a knife around the edges before releasing the springform pan.

Top with strawberry sauce, caramel, or fresh berries if desired.
