Instructions
Sattu Ka Pratha
Make Dough: Mix 1 cup wheat flour with water and a pinch of salt, knead
into a soft dough. Rest for 15 minutes.
Make Filling: Mix ½ cup sattu, chopped onion, green chilies, coriander,
ajwain, salt, and lemon juice. Add a little water to moisten.
Assemble: Roll out a small dough ball, add 1-2 tbsp filling, seal, and
gently roll it flat.
Cook: Cook on a hot tawa with oil or ghee until golden on both sides
Baingan ka chokha
Roast Eggplant: Roast 1 large eggplant over an open flame or in the oven
until soft. Peel and mash.
Cook Masala: Heat oil, sauté 1 chopped onion, 1 tsp ginger-garlic paste,
and 2 chopped green chilies. Add 2 chopped tomatoes and cook until soft.
Add Spices: Mix in ½ tsp turmeric, 1 tsp cumin, 1 tsp red chili powder, and
salt. Cook for a few minutes.
Mix and Cook: Add the mashed eggplant to the masala. Cook for 5-7
minutes. Garnish with chopped
Cucumber and roasted peanuts kosambari
Just mix some roasted pounded nuts and whatever greens and cucumber
you like and drizzle some lime juice, some salt and little sugar to balance.

CHUTNEY LUNCH BOX

Instructions
Jowar Uttapam
Make Batter: Mix 1 cup jowar flour, ½ cup rice flour (optional), salt, and
water to form a thick batter. Rest for 10 minutes.
Prepare Toppings: Mix chopped onions, tomatoes, green chilies, and
coriander.
Cook Uttapam: Pour batter onto a hot greased pan, spread lightly. Add the
vegetable toppings and press gently. Drizzle oil around the edges.
Flip and Cook: Cook on medium heat until golden on both sides.
One pot sambar
Heat ghee in pressure cooker, add curry patta and sambar powder to roast
very briefly and then add rinsed masoor daal (2 tbsp) and chopped lauki
(bottle gourd, 400 gm), add a cup of water, salt to taste and pressure cook.
Add a little tamarind extract in the last, stir well and pack.
Tomato coconut chutney
Sauté Ingredients: Heat 1 tsp oil in a pan. Sauté 2 chopped tomatoes, 2
dried red chilies, and 1-2 garlic cloves until soft.
Grind: In a blender, add the sautéed tomatoes, ½ cup grated coconut, 1
tsp roasted chana dal, a small piece of tamarind, and salt. Blend into a
smooth paste with a little water.
Tempering (optional): Heat 1 tsp oil, add ½ tsp mustard seeds, 1 sprig
curry leaves, and a pinch of hing (asafoetida). Pour over the chutney.

Instructions
Ragi stuffed bread
A mix of ragi and whole wheat flour (60:40) is kneaded with a little salt,
sugar and sourdough starter and kept overnight. A mashed paneer mix
with chopped onions, green chillies, salt and pepper is then stuffed into
flat breads and is cooked over hot griddle just like kulchas.
Parval bhujia
Scraped and long quarter wedges of parval are stir fried with kalonji
(nigella seeds), green chilly and little turmeric and salt, on low flame, till
they start curving at the ends.
Mango chutney
Cook Mango: Peel and chop 1 raw mango. In a pan, add the mango, ½ cup
sugar, and ¼ cup water. Cook until the mango softens.
Add Spices: Add ½ tsp red chili powder, ½ tsp cumin powder, ¼ tsp
fennel seeds, and a pinch of salt. Stir and cook until the chutney thickens.
Cool and Serve: Let it cool before serving.

Cabbage poriyal
Sauté Aromatics: Heat 1 tbsp oil in a pan. Add ½ tsp mustard seeds, ½ tsp
urad dal, 1 dried red chili, and a few curry leaves. Let them splutter.
Add Cabbage: Add 2 cups finely chopped cabbage. Sauté for 2-3 minutes.
Season: Add ¼ tsp turmeric, salt to taste, and a little water. Cover and
cook on low heat until the cabbage is tender.
Finish: Add ¼ cup grated coconut and stir well. Cook for another 2
minutes.
Aloo shak
Sauté Aromatics: Heat ghee or oil in a pressure cooker. Add cumin seeds
and let them crackle. Add onions and ginger, sauté until soft.
Cook Tomatoes: Add tomato puree and green chilies, cook for 2-3 minutes
until soft.
Spice it Up: Add turmeric, garam masala, salt, and chili powder. Stir well.
Pressure Cook: Add chopped potatoes and ½ cup water. Pressure cook for
3-4 whistles.
Finish: Once pressure releases, add peas and simmer. Garnish with
coriander leaves.

Mix ingredients like whole wheat flour, methi, spices, and yogurt into a
dough. Rest, roll into circles, and cook on a hot tawa until golden brown
on both sides.

Instructions
One pot soya biryani
Sauté: Heat 2 tbsp oil, add 1 tsp cumin seeds, 1 bay leaf, and 1 chopped
onion. Sauté until golden. Add 1 tsp ginger-garlic paste.
Add Spices: Add 1 chopped tomato, ½ tsp turmeric, 1 tsp garam masala, 1
tsp chili powder, and salt. Cook until soft.
Combine: Add soaked and squeezed 1 cup soya chunks and 1 cup rinsed
basmati rice. Pour in 1½ cups water.
Cook: Bring to a boil, then simmer on low for 15-20 minutes until rice is
cooked.
Raw papaya salad
Shred: Peel and shred 2 cups raw papaya and 1 carrot.
Mix Dressing: Combine 2 tbsp lemon juice, 1 tbsp honey, 1 tsp roasted
cumin powder, and salt.
Toss: Mix papaya, carrot, and dressing.
Garnish: Top with chopped coriander and a sprinkle of chaat masala
(optional).
Raita
Mix Yogurt: Whisk 1 cup plain yogurt until smooth.
Add Vegetables: Stir in ½ cup chopped cucumber, ¼ cup chopped
tomatoes, and 1-2 tbsp chopped cilantro.
Season: Add ½ tsp cumin powder, ¼ tsp black salt, and salt to taste.
Garnish: Sprinkle with a pinch of red chili powder and additional cumin
powder.
