New York Cheesecake

Ingredients:
300 grams digestive biscuits
125 grams butter
400 grams cream cheese (Philadelphia)
2 eggs
150 grams powdered sugar
2 teaspoons vanilla essence
400 ml sour cream 24% fat
Preparation:
1. For the first layer: Crush the biscuits and melt the butter using a bain-marie or over low heat.
Mix the melted butter with the biscuits and spread the mixture evenly on the bottom of a tray
greased with butter or oil, pressing it down with your fingers to create a smooth layer. Set the
tray aside, ideally in the freezer.
2. For the second layer: Mix 400 grams of cream cheese (Philadelphia) with 100 grams of
powdered sugar, one teaspoon of vanilla essence (or the seeds from a vanilla pod), and the two
eggs until the mixture becomes smooth. Pour the mixture over the biscuit layer and place the
tray in a preheated oven at medium heat (200°C) for 20 minutes. Check the mixture occasionally
and remove it from the oven once it has set, ensuring it doesn't brown (heat only from below).
Let it cool while you prepare the third layer.(min 5 min)
3. For the third layer: Mix the sour cream with 50 grams of powdered sugar and one teaspoon of
vanilla essence until combined. Pour this mixture over the cream cheese layer and return the
tray to the oven for another 10 minutes at 200°C. Remove the cheesecake from the oven, let it
cool completely, then refrigerate it overnight, covering the tray with plastic wrap. This will
prevent the cheesecake from absorbing odors from other foods in the fridge.
