KEY RESPONSIBILITIES

Job Summary
The Hygiene Executive is responsible for ensuring the highest standards of food safety, sanitation, and
hygiene in all food preparation, storage, and service areas. The role involves regular inspections,
compliance monitoring, training support, and coordination with various departments to maintain a safe and
hygienic environment for guests and employees.
Essential Duties and Responsibilities
Food Safety & Hygiene Compliance
 Assist in the implementation and enforcement of food safety management systems.
 Monitor compliance with hygiene and sanitation regulations in all food service areas.
 Conduct routine hygiene inspections and identify areas for improvement.
 Ensure proper handling, storage, and labeling of food items to prevent contamination.
 Enforce personal hygiene standards among food handlers and associates.
 Assist during inspections from government bodies e.g MoPH & Municipality.
Hygiene Monitoring & Audits
 Maintain accurate records of hygiene inspections, corrective actions, and compliance reports.
 Support the Hygiene Manager in preparing for internal and external audits.
 Conduct random checks on food preparation areas, storage units, and cleaning processes.
 Oversee temperature control logs for chillers, freezers, and food holding areas.
 Ensure the proper use and storage of cleaning and sanitization chemicals.
 Ensure food handler’s health certificates and licenses are up to date

Cleaning & Sanitation Supervision


 Oversee the cleaning schedules and ensure strict adherence to sanitation protocols.
 Verify the effectiveness of dishwashing procedures and equipment sanitization.
 Monitor waste disposal practices, ensuring compliance with environmental regulations.
 Coordinate with the Stewarding and Engineering teams for proper maintenance of kitchen
equipment and infrastructure.
 Support the implementation of pest control measures and liaise with external service providers when
necessary.

Training & Awareness


 Conduct hygiene briefings and training sessions for kitchen and service staff.
 Reinforce food safety procedures through on-the-job coaching and awareness programs.
 Ensure all new employees receive hygiene orientation and training.

 Collaborate with the Talent & Culture team to develop training materials and refresher courses.
Incident Management & Reporting
 Report any hygiene-related incidents, food safety risks, or violations immediately to the Hygiene
Manager.
 Assist in investigating foodborne illness complaints and recommending corrective actions.
 Work closely with the culinary and service teams to address hygiene concerns.
 Prepare monthly hygiene and sanitation reports for management review.

Interdepartmental Coordination
 Collaborate with the Executive Chef, Food & Beverage Service team, and Stewarding team to
maintain hygiene standards.
 Work with the Engineering team to ensure proper maintenance of ventilation, drainage, and water
supply systems.
 Coordinate with external agencies and government health authorities for hygiene inspections and
compliance matters.

General Responsibilities
 Maintain confidentiality regarding all hygiene-related matters.
 Stay updated on local health and safety regulations and industry best practices.
 Perform any other duties assigned by the Hygiene Manager to support hygiene and sanitation
objectives.

Standard Responsibilities
 Comply with and adhere to the Rosewood Hotels & Resorts company policies.
 Comply, Drive, and ensure there is a strong level of ownership and execution related to the FSMS.
 Take on other tasks in addition to the ones stated, in a reasonable framework.
 Be always a “brand ambassador” and ensure brand integrity and clarity are always maintained.
 Model the company’s culture, vision, mission, principles, and ways we always work.

Confidentiality
Whist working for the company there will be access to a wide variety of confidential information
concerning the company, guests, and associates. It is vital that all such information remains confidential
and must not be disclosed to anyone outside the company, guests, and associates, unless otherwise stated.

Health & Safety


 Be aware of and comply with safe working practices as laid down under the Health and Safety
rules, regulations and procedures as applicable to your place of work. This will include your
awareness of any specific hazards at your workplace.
 The wearing of appropriate protective clothing provided by or recommended by the Company will
be obligatory.
 Report any defects in the building, plant, or equipment according to hotel procedure.
 Ensure that any accidents to associates, guests or visitors are reported immediately in accordance
with correct procedures.

 Attend Statutory Fire, Health & Safety training and be fully conversant with and abide by all rules
concerning Fire, Health & Safety.
Be fully conversant with:
 Regulations
 Risk Assessments for your department
 Hotel Fire & Bomb Procedures
 Food Safety Procedures
Rosewood Impacts
 Actively participates. Supports and supervises recycling programs within the group.
 Updates management on environmental data, local authority guidelines and circulars pertaining to
environmental protection and initiatives.

 As the hotel’s level of business varies, there is a need for flexibility in attitude, approach and
working hours.
